Stir-fry recipes are one of my favorite ways to get fast, healthy dishes on the table, especially when it comes to dinner and when time is tight. This peanut chicken stir-fry is a great recipe not only because it comes together in a flash and is super tasty, but also because it is extremely versatile.

For this peanut chicken stir-fry you can add any protein of your choice as well as your favorite veggies. The combinations are endless, so if you prefer to use fish, tofu, or beef in place of chicken, go ahead.

When it comes to Asian flavors, I like to try different sauces and experiment with them to add my own twist. This peanut chicken stir-fry sauce is very indicative of Asian cooking. If you haven’t tried peanut flavor dishes yet, you are truly missing out. It is one of my greatest discoveries when it comes to preparing Asian food.

When making the peanut sauce I normally make 2-3 extra batches so that when ever it comes time to make this recipe again I can throw it together even faster. The sauce will keep in the fridge for at least 1 week so don’t be afraid to double the batch.

This peanut chicken stir-fry is a recipe I recently chose to cook at the Bon Appétit kitchen for a Samsung project. I used Samsung’s cook top and wok ring to make this stir-fry that was nothing but sensational. The wok grate aids positioning the wok to make sure it stays in place.

I love Samsung’s new cook top. With the power heat-boosting feature it allows the chicken’s cooking time to be reduced to about 3 minutes rather than 5-7 minutes when cooked on a conventional cooktop.

The veggie mixture will also cook much faster due to the heat-boosting feature, making this step shorter as well. A win-win situation when I am busy taking care of other things.

Be sure to click on the link for the video recipe so that you can take a look at how the recipe comes together.

If, like me, you like quick, healthy, tasty dinner recipes, you will enjoy this peanut chicken stir-fry. It is one of my family’s favorites.

Enjoy!

I love making smoothies on a regular basis, not only because they are super easy to make but you can add pretty much anything to them. Most often than not I like to have them for breakfast but sometimes I also consume them after working out or even as a snack. This banana peanut butter smoothie is a great contender for an after work out drink, full of protein and it tastes just like a milk shake.

Have you tried to make your own smoothies instead of purchasing them at the store? Smoothies tend to be quite costly and ingredient quality lacks sometimes. I feel much better when I can make my own and control what goes in. This banana peanut butter smoothie is the prime example.

Today I was able try Burt’s Bees® new product, Burt’s Bees Protein Healthy Radiance – Vanilla and add it to my smoothie.

I love the fact that I can use protein powder that I can trust, especially given the fact that my kids are the ones that also consume smoothies I make.

Burt’s Bees protein blend was carefully formulated with five protein sources Pea, Rice, Flax Seed, Sunflower Seed, and Oats to achieve high digestibility and a complete essential amino acid profile.

Nature is incredibly resilient and we want that same strength and flexibility in our own lives. That’s why they tapped some of nature’s most powerful ingredients to support our nutrition needs.

My kids are both growing but are involved in sports. Anything that I can feed them with extra protein is well received, especially if it tastes like something sweet they would like like a milk shake.

If you haven’t started making your own smoothies it is something that takes no longer than 5 minutes so I hope you try it soon. If you want to start getting into healthy habits making smoothies is an easy way to start.

Enjoy!

How about some no bake desserts that not only will save time since there is no baking time required but at the same time they are perfect for the hot months ahead and they are also healthier?

I know I haven’t been posting many recipes for a while but it is because school is just simply kicking my behind. I mean, school schedule runs from 8am to 5pm and then coming home to relax for perhaps an hour and going back to studying has taken much of a toll on me.

Don’t get me wrong, I knew school was going to be hard but having 3-4 exams a week on subjects that are nothing but pathology, physiology, gross anatomy, pharmacology etc it is very hard, plus I am not one of those people that can function with 4-5 hours of sleep every day.

Anyways, will see how it goes because I worked really hard to get to where I am right now and I would hate to turn around. Will see what the next few weeks hold. Like I always say, if it is meant to be it will be so I just have to keep a positive attitude.

Much of my cooking is left for the weekends. I get to cook about 4-6 recipes and be able to eat that during the week. I refuse to eat out simply because I need good quality food to nourish my brain cells!

I haven’t had a chance to make many desserts though. I plan on making a few of these no bake desserts since there is no baking required and it will take a shorter amount of time to get them ready. Hopefully in the next few days.

Well, I hope everyone is doing great. I have a couple more round ups ready for you since I have about 400+ recipes in my blog already. I am sure most of you forgot OF some of the recipes I have so I hope you like these.

Enjoy!

Almost every week I make energy bites for my kids to have as a snack or to take to school. Because they love peanut butter these peanut butter energy bites were something they enjoy a lot. They were gone in not time!

No matter what type of nut butter I may decide to make energy bites with my kids will eat them rather fast.

Sometimes, after picking up the kids from school, we go straight to the gym for their activities. Energy bites tend to keep them until dinner time so more often than not this is what I prepared for them to have for an after school snack on the go.

The choice of drink is almost always water. They are always super thirsty after school. I don’t know if it is because they don’t have enough time to drink or what it is but for some reason they are always super thirsty after school.

In a 2015 survey conducted by NESTLÉ PURE LIFE, moms and kids revealed many surprising insights about their hydration habits.

Drinking water is one of the biggest “healthy habit” struggles moms have with their kids (38%), even more than struggles like “eat your fruit” (29%), “get enough exercise (23%), “eat your breakfast” (19%), and “drink your milk” (18%).

If you like to use different nut butters for these peanut butter energy bites go ahead. It will also work. I have done it with almond butter before and they worked really good. You can even add some cacao powder or any ingredients you may like to experiment with. Remember that energy bites are really versatile so anything goes.

Enjoy!

Football season is just upon us and these healthy cookie dough footballs are just perfect for fun football nights. My husband is a huge football fan, after all, he used to play college football. From time to time I get to make football theme food and today this is what I came up with.

I am not much of a football fan myself but once in a while I will watch a game. I mean, don’t ask me about any of the rules or anything but I will watch and enjoy myself watching with the boys. As a matter of fact, about 3 weeks ago, I actually went to my first tailgating party. It was a lot of fun but of course what I enjoyed the most was the food!

These healthy cookie dough footballs would have been perfect for that, as no one brought dessert. Not only these are gluten and dairy-free but these are actually good for you.

For these healthy cookie dough footballs I used unsweetened almond milk mostly because it is very neutral in flavor, has no added sugar, it is Non-GMO, and has no artificial colors, or flavors.

If you are a regular visitor of Eat Good 4 Life you pretty much know that most of my recipes are vegetarian, gluten-free and some vegan. These little things almost resemble that. Not bad at all!

If you would like to see more recipes that are meatless and dairy-free, especially for Monday football nights, visit Silk’s page. There is also a giveaway so make sure you check that out too.

For this particular recipe, while you can use regular chocolate, I opted for using a vegan brand for those concerned with dairy. Also, the base of these healthy cookie dough footballs are made from chickpeas. I must say, these taste nothing like chickpeas, and no one will ever know there are chickpeas in here so trust me on this and give them a go. They are just plain delicious!

I hope you like this little creation. The perfect healthy dessert for Monday night football that it is gluten and dairy-free.

Enjoy!

Place one cookie dough football at a time into the melted chocolate and coat completely ( I do this step with a couple of forks) Transfer footballs to the prepared cookie sheet. Once all the cookie dough pieces are coated with chocolate place them back in the freezer for 10 minutes.

Melt the white chocolate and pipe onto the footballs to create a string. Keep footballs refrigerated.

I am still in South Spain visiting family and friends. At the same time, since we are staying in this area for 6 weeks, we are visiting a lot of amazing spots that I want to share with you in several blog pots when I get back. Some of the towns we are visiting are out of this world. Surreal to say the least. You are not not going to believe your eyes, so stay tuned!

These almond butter chocolate crunch bars are super easy to make. I actually did a video for you so that you can see how easy they really are. While I used almond butter, you can still use any other butter you wish. For those with a nut allergy using sunflower butter will work perfectly.

These Almond butter Chocolate crunch bars are also gluten-free and vegan. A win win in my book, so for those with these dietary restrictions these bars are perfect.

As you can see by the pictures, my brown rice puff cereal was a little bit different than the ones you will find in the USA. These are chunkier and bigger but the principle is the same. I actually liked them a lot. Now, if you are in Spain, you will find them in any supermarket. I was up North Spain when I made these bars and I bought them at LUPA supermarket.

I think you can also add any other mix-ins you like. If you like to increase the protein content chocolate protein powder will work. If you like to add chia seeds or flaxseed meal you can also do that. These ingredients will make the almond butter chocolate crunch bars even more nutrient dense.

Anyhow, I hope you get to make these easy almond bars. I am going to try to make a few more easy recipes while here in Spain. Will see how it works because at the moment my kitchen equipment and space is very limited!

Sill from Spain,

Enjoy!
