I love to start the day with something healthy, full of fiber and nutritious. When it comes to overnight oats variations are endless. Today I made this chocolate peanut butter overnight oats that my kids certainly enjoyed. Fast, easy and delicious!</p>

<p>At last I get to post a recipe.</p>
<p>It has been a hectic last 2-3 weeks with PA school. We have just got done completing our summative week and I hope everything went well for me.</p>
<p>We got 2 physical encounters with standardized patients, which I think I did really well, and then one crazy written exam. A lot of you wished me well and sent positive energy and vibes so I hope that worked on my favor. I really want to be done with PA school, travel a little, enjoy my family and eventually start working.</p>
<p>I just need a few months to recharge my energy and eventually start my career as a PA. It has been a very busy, overwhelming past 2 yrs so I think a break is in order.</p>
<p>Anyways, onto this amazing chocolate peanut butter overnight oats bowl recipe.</p>
<p>I love making overnights oats not only because they are super easy to prepare, like 10 minutes max, but because it is super healthy, feeling and tastes super awesome.</p>
<p>I have made a <a href="https://www.eatgood4life.com/blueberry-coconut-overnight-oats/" target="_blank" rel="noopener">blueberry and coconut overnight oats version</a> that it is also magnificent. If you have not tried to make overnight oats yet I really encourage to do so. I think you will not be dissapointed.</p>
<p>As you may know, this coming summer I am going back to my beloved Spain for almost 2 1/2 months. While in Spain we are going to do some traveling and for a few days I will get to go to Morocco.</p>
<p>I will be going with my best friend, but can you believe that we will be in the Sahara desert in July? We are going to melt but that was the only time that we could make it. We are going to be taking cooking classes and learning about Moroccan cuisine. I really can&#8217;t wait.</p>
<p>I will be posting a lot of Moroccan recipes upon my return as well as a lot of pictures and things to do if you ever make it of that part of the world. Stay tuned for that. I think Morocco is going to be epic.</p>

Today I actually added some white beans to this high protein white bean arugula salad because they add quite a bit of protein, fiber, minerals and vitamins. This salad took me no longer than 10 minutes to prepare. It was a great lunch to take with me to work.</p>

<p>I haven&#8217;t been able to make new recipes lately. I have a stack of new recipes that I want to tackle but having my last 3 months of Physician Assistant school is giving me a lot of anxiety and very little time to do the things that I want to do.</p>
<p>The next two weeks are going to be hell on earth because I have 3 of my exit exams and I am really praying that I do well enough to pass. I have been working really hard so I hope everything turns out ok. My anxiety doesn&#8217;t help but I will try my hardest to get a handle on it&#8230;.we shall see.</p>
<p>Once I am done with school, I am also planning on spending time overseas. First I would like to secure a job before my departure so let&#8217;s see how that turns out as well&#8230;. So much to these few months&#8230;..Just wish me luck!!!!</p>
<p>This super awesome high protein white bean arugula salad was something I just put together in about 10 minutes&#8230;.literally. I have never added pesto as a dressing for any of my salads but I think the combo was rather tasty.</p>
<p>As any salad, you can add any veggies of your liking and if you are not too fond of white beans you can just use any other legumes you may like. Chickpeas will go great in this salad as well.</p>
<p>On another note, this coming summer I will be going to Morocco for about 10 days. I have been there once but really didn&#8217;t get to explore or do much. I am really excited to explore some of the areas and experience their culture, food and much more.</p>
<p>It is something that I have been wanting to do for quite some time so I can&#8217;t wait. I will be posting much of my adventure in my blog so you will be able to learn things to do while there if you ever make it to that side of the world.</p>

<p>Smoothie bowls tend to be on bit thicker than regular smoothies, or at least that is how I make them, otherwise all my toppings sink to the bottom.</p>
<p>Smoothie bowls are a great way to start the day or even to have as a snack. The variations are endless and on this one I used things I had on hand. We are loving hemp hearts right now. Then I added some chia seeds, cacao nibs and fresh fruit that I always have on hand.</p>
<p>Truly the sky is the limit when it comes to making smoothie bowls. Since Valentine&#8217;s Day is just around the corner I figure I can make something that is healthy, easy and quick.</p>
<p>As some of you know, I don&#8217;t have much time on my hands lately. In 4 months my life will be way better and have a switch for the best since I will be graduating from Physician Assistant school and be able to continue with my normal life. Being a mom, work and carry on with my life more or less.</p>
<p>Anyways, I have another healthy, quick, dessert that I made over the weekend that I want to post very soon. I always make double the batch whenever I am baking or cooking so that we can have it for several days. Not necessarily concurrent days but at least another time throughout the week so that it doesn&#8217;t seem to repetitive that whe are eating the same thing over and over.</p>
<p>Anyways, start making your own smoothie bowls. I know once you start you won&#8217;t be able to stop. So healthy, good and easy.</p>

										<content:encoded><![CDATA[<p>It has been quite a bit of time since I had my mind set on making a no bake chai spice pie. Yesterday it was the day and I couldn&#8217;t  have been happier with the result. Much better than anticipated.</p>

<p>I was afraid the filling mixture wouldn&#8217;t turn out as I wanted it to but to my surprise it actually worked better than expected.</p>
<p>I love chai spice flavor anything. I am thinking of making a sponge cake with this flavor as well as the frosting. I have not made a sponge cake in forever and since my birthday is just around the corner I think this type of cake would be the perfect contender.</p>
<p>I am probably going to make some ice pops this flavor as well. I love making my own ice pops around this time of year. They are so easy and versatile and I believe my kids will enjoy them too.</p>
<p>Anyways. I kept the base of the pie quite simple with only 2 ingredients. I actually have a <a href="https://www.eatgood4life.com/halloween-coconut-date-bites/" target="_blank" rel="noopener noreferrer">recipe for energy balls</a> just using these two ingredients. The mixture is delicious just by itself so if you like to make a bit more and make balls with it go ahead. I did so I could have some to take for school during the week.</p>
<p>I am planning on making more no bake pies this summer. I will be using the same base for the filling. I think the sky is the limit when using cashews to make vegan pies. I intent to try one with a lemon/lime flavor. I love lemon anything  as well so I think that will work well.</p>
<p>Anyways, I won&#8217;t bored you any further with none of my recipe ideas so I hope you get to try this no bake chai spice pie that it is vegan and gluten free. It is perfect for any gathering or healthy dessert.</p>

<p>Transfer the mixture to a removable pie pan of your choice. I used a <a href="http://amzn.to/2qHZOu9" target="_blank" rel="noopener noreferrer">rectangular one.</a>&nbsp;Press the mixture to the bottom of the pan without going up the sides.</p>
<p>Add the filling ingredients to the food processor and pulse until you obtain a homogenous mixture. About 2-3 minutes.</p>
<p>Transfer the mixture to the pan and spread evenly. Arrange the chopped pecans around the edge of the pie and freeze for about 3-5 hrs.</p>
<p>Take the pie out of the freezer and drizzle the chocolate over the pie and serve.</p>

They came out fabulous so I hope you like them.</p>

<p>At last I get to post a recipe. I actually needed to take a few weeks brake from the blog because I wanted to catch up with things in school as well as focus as to what would be next for the blog as far as recipes are concerned. I also want to expand my travel section and even though I haven&#8217;t been traveling lately I have a lot of material from previous travels that I want to share with you all. I am organizing all my travels, recipe schedule and all so stay tuned, lots of good things to come.</p>
<p>Onto the recipe now.</p>
<p>I love coconut anything. I have been wanting to make these dark chocolate coconut truffles for a long time now but never got around to it because I had other recipes I wanted to tackle, however, last week, since I also wanted to have something with coconut flavor, I went ahead and made these.</p>
<p>These truffles are truly out of this world. They only require 4 ingredients and you don&#8217;t need anything really especial except for your food processor to make these.</p>
<p>I am going to be making more coconut desserts in the upcoming weeks. I have been wanting to make coconut macaroons as well so I might get to that recipe soon. These dark chocolate mint coconut truffles for now are one of my favorite coconut desserts&#8230;so easy to make and so good.</p>
<p>You can use any type of chocolate you like, however, I always use dark chocolate for all of my desserts that need chocolate. Less sugar, much more chocolate intense flavor plus it contains many more of the cocoa benefits. Dark chocolate all the way.</p>
<p>Going forward, I am going to be posting like I was before. I just needed to take a few weeks off to regroup sort of speak.</p>

<div class="instructions" itemprop="recipeInstructions"><p>Line a <a href="http://amzn.to/2n0uk0U" target="_blank">cookie baking tray</a> with <a href="http://amzn.to/2miJZ8x" target="_blank">parchment paper</a> and set aside.</p>
<p>Place the coconut, maple syrup, mint, and coconut oil in a <a href="http://amzn.to/2n0yYfB" target="_blank">food processor</a> until it comes together. Transfer to a small <a href="http://amzn.to/2mS5kbK" target="_blank">mixing bowl</a>. Using your hands, squeeze the mixture into about small balls. This step may be a bit difficult. I used my finger and gently roll them out. (If you really find they don't come together at all just a tad more maple syrup)</p>
<p>Place the coconut balls in the freezer for about 15 minutes or until firm.</p>
<p>Melt the chocolate in your microwave or double boiler. Using two forks, roll each coconut ball in the chocolate until completely covered. Let the extra chocolate drip off the fork. Place the chocolate truffle onto the prepared tray and place back in the freezer until the chocolate has hardened.</p>
<p>You can top the truffles with some extra coconut flakes before they harden. This step is optional.</p>
<p>Store in the refrigerator.</p>

										<content:encoded><![CDATA[<p>I love making smoothies on a regular basis, not only because they are super easy to make but you can add pretty much anything to them. Most often than not I like to have them for breakfast but sometimes I also consume them after working out or even as a snack. This banana peanut butter smoothie is a great contender for an after work out drink, full of protein and it tastes just like a milk shake.</p>

<p>Have you tried to make your own smoothies instead of purchasing them at the store? Smoothies tend to be quite costly and ingredient quality lacks sometimes. I feel much better when I can make my own and control what goes in. This banana peanut butter smoothie is the prime example.</p>

<p>I love the fact that I can use protein powder that I can trust, especially given the fact that my kids are the ones that also consume smoothies I make.</p>
