This recipe is sponsored by Florida’s Natural. I used their product to make these delicious creamy strawberry lemonade popsicles. The opinions and text are all mine. The end.

Every summer I get to make a multitude of popsicle recipes. It is my favorite thing to prepare, as the kids really enjoy them and it keeps us cool over the summer months. These creamy strawberry lemonade popsicles are so good I have made them twice in the past two weeks. They are refreshing, easy and super tasty!

For this creamy strawberry lemonade recipe I only used three ingredients: fresh strawberries, Florida’s Natural Lemonade and Greek yogurt. What a great combo, I must add. The popsicles turned out simply sensational, for sure one of the best popsicle recipes I have made to date.

As I mentioned, for this recipe, I used Florida’s Natural® Lemonade. You can find Florida’s Natural Lemonade in six delicious flavors: traditional Lemonade, Lemonade with Pomegranate, Lemonade with Strawberry, Lemonade with Raspberry & Peach, Lemonade with Blackberry and Lemonade Iced Tea. Whatever flavor you choose, all of Florida’s Natural Lemonades offer a refreshing great taste, with no artificial ingredients or preservatives.

Plus, when you buy Florida’s Natural Lemonades, you’re helping to support Alex’s Lemonade Stand Foundation, which funds childhood cancer research. An even sweeter reason to sip!

When it comes to popsicles, you can make endless variations. They are the perfect treat for the summer, especially when it comes to kids. You can even have kids help make them. They are super easy and made in a flash. The perfect kid activity this summer!!

If you haven’t tried to make your own popsicles you really should give it a try. Homemade versions taste way better than store bought. Try making this easy and refreshing creamy strawberry lemonade popsicles, you will not be disappointed.

Enjoy!

Last week I got the chance to make my usual gigantic batch of granola. It is not often that I do but when I get to make it I make at least about 20-30 lbs. I have a huge professional bowl that is perfect for my large batches so using some for the pears, yogurt and granola bowl was just perfect.

Today I wanted to have something especial and more fancy for breakfast. Nothing too elaborate but different. I decided to add some really ripe pears to my classic bowl of yogurt and granola and voila.

I actually thought about poaching the pears but because they were so soft and juicy I decided to have them just like that. Besides, since I didn’t poach them they kept their nutrients even more so a win win for me.

There endless way you can serve granola. My family goes through granola like there is no tomorrow. We have it with yogurt for breakfast and sometimes as a treat we mix it in with ice cream. You can also have it with your classic milk of choice, either way is great really.

I have made lots of versions for granola. Once you start making your own granola, since not only it is super easy to make, it is way more economical. Homemade granola is also by far superior than any other store bought brand I have purchased in the past. Even gourmet granola.

If you like to make your own granola like me here is my link for all the granola recipes I have in the blog. I am telling you, granola is one of the easiest things you can make.

I am waiting to take my exam in two weeks to be able to get into the kitchen again and make some of the recipes I have been wanting to try for quite some time. I have a huge list so will see which ones I will get to tackle first.

Until then I hope you like this pears, yogurt and granola bowl,

Enjoy!

Today, after a full week of not documenting any recipes , I was able to make my first dessert, no bake lime cheesecakes. It is not often that I take a few days off from blogging and taking pictures but I really needed a small brake. I think there will be more to come, especially after I start school next week!

Anyways, these individual no bake lime cheesecakes where just plain sensational. Since the weather is getting warmer I am trying to avoid turning on the oven and sticking with no bake desserts and things of that nature.

It also saves me time since normally desserts that need to be baked require more time.

As I was making these no bake lime cheesecakes, of course, I was tasting the mixture. I couldn’t help but to think of other flavors that would go great with this ingredient combo. I don’t know exactly which flavors would be good next time but I am thinking that any type of berry together with vanilla may probably be great. Do you happen to have any other flavor combo ideas? If you do, please share.

I just remembered that yesterday was cinco de Mayo and this recipe would have been indicative of that holiday given the flavor. Oh well, maybe I should have posted the recipe yesterday instead but never the less, I don’t think you need the excuse of that especial day to make these cheesecakes.

For these no bake lime cheesecakes I sweetened the batter with Truvia’s new product, Truvia Nectar. I must say I am in love. The flavor is more subtle than using straight honey so I think it blends really well with the lime flavor and cream cheese mixture.

I am planning of making more desserts with their new product, especially for my diabetic friends, so stay tuned.

Well I hope that you like these individual no bake lime cheesecakes. You can keep them in the fridge for up to 5 days. These are extremely refreshing and light to the palate so I hope you get to try them soon.

Enjoy!

I have just finished making this amazing 4 ingredient creamy blue cheese salad dressing after going to the grocery store and not finding one brand in which the ingredient list would be just plain and simple.

To my surprise this 4 ingredient creamy blue cheese salad Dressing turned out great. Just 4 ingredients, tastier, healthier, easier to make and more economical. A win win.

Granted you must like blue cheese, which I do, thus this salad dressing is going to be one of my go to salad dressings to whip up for time to come.

Have you tried to make your own salad dressing before? It is such a big business and truly salad dressing is one of the easiest and fastest things to make. I also have this honey mustard salad dressing that is to die for. Many of my friends that have had this salad recipe always ask me for the dressing recipe.

I have plans to post some of my other favorite salad dressing recipes, however, I also to use extra virgin olive oil or sesame oil with rice wine vinegar a lot. So simple yet so good…

What is your favorite salad dressing?

I actually made this 4 ingredient creamy blue cheese salad dressing after I made some cauliflower tacos. I will be posting the recipe shortly so stay tuned for that. It was my first time making them and it will not be my last.

I hope you make this dressing. If you like blue cheese you will love it. There is nothing easier than making your own salad dressing, I promise.

Enjoy!

I got this silicone mold a long time ago and never got to use it before. I have planned many recipes before to get some use to it but I haven’t had time to get around to them. The minute I am done with my finals I will though. I have a couple of recipes I want to include in my book using this mold so let’s see how it goes.

I think after this past semester, I am going to take a long brake and be lazy for while. I am so exhausted from my crazy schedule.

On a positive note, this coming Monday we are finally moving into our house. After 4 months I think it is happening. We have had a few bumps in the road, it has been extremely stressful to say the least. I really don’t wish this to anyone but if there is a piece of advice I can share with you guys is that I hope you have good house insurance. We had to go through third parties contractors because our insurance company was swamp with claims and that screw us up a ton. Needless to say everything took double the time.

Anyways, I am just looking forward to getting back. I will post a new picture of my kitchen. That was not included in the remodel so we had to pay out of pocket. I think it was worth the money though. Still a small kitchen but much more space to put kitchen equipment in! I can’t wait to show you.

Well I hope you like these cranberry chia frozen yogurt bites. They are extremely easy to make as well as healthy. You can use any type of yogurt or jam of your choice. Anything goes.

Enjoy!

Lately, I have been experimenting with vegetarian salads. This vegetarian taco salad is by far one of my favorites. The dressing is the best part about this salad. It is creamy, tasty and extremely easy to put together.

Salads is one of our main dinner choices we eat 3-4 times per week at my house. I try to have a variety of salad recipes so that my kids and my husband don’t get tired of them. This vegetarian taco salad is one of their favorite salads. I don’t know if it is because of the tortillas or the thick creamy dressing. Either way I am glad they eat it with ease.

For this salad, I used gluten free taco seasoning from McCormick to make the dressing. I mixed it in with Greek yogurt to keep healthy, lighter and nutritious. The McCormick’s taco seasoning is made with natural ingredients as well as gluten free. It has no hidden MSG, fillers, preservatives or any fake ingredients, just plain old spices, which is what we like!

The dressing turn out great. A little bit thick but that is how we prefer it. If you like it more runny you can add a little bit more vinegar and oil or just water if you like to leave it lighter in calories. This dressing keeps well on a close container in the fridge so you can use it for any other type salads of your choice later on.

For a different version, if you like you can add any other type of vegetables to this vegetarian taco salad. I have added onions as well as some slice avocado and chopped cilantro before. You can’t really go wrong on the mix-ins. If you are not vegetarian you can even add some grilled chicken or some crumbled lean beef for some extra protein.

I have taken this vegetarian taco salad for lunch before, and as long as you mix the dressing right before eating the salad you should be fine. It will not get soggy, watery and nasty looking.

I have also used fresh spinach instead of fresh kale. Fresh arugula or any mix greens of your choice will work. I try to use different type of greens so I will stick with kale for a week and then switch my greens for the weeks ahead.

I hope you like this simple, healthy vegetarian taco salad. Even my two little ones enjoy it since they like the crunch that comes from the tortillas. They think it is fun and unusual to have corn tortillas in a salad but nonetheless they love it!

Enjoy!
