Not only I have used some typical ingredients to increase the protein content but I have used a few powerful elements that bring the recipe to the next level.</p>

<p>I have recently started researching and using more superfood powders. While there might be a bit pricy they tend to last a long time. I used them mostly to add them to my smoothies as well as with overnight oats recipes. They are the perfect healthy addition.</p>
<p>I started working at the beginning of September so every single weekend I plan my meals for the week. Breakfast always consist of some sort of overnight oat recipe so have to make sure I change the flavor from week to week.</p>
<p>When I make overnight oats, I always make enough to last for the whole week, especially enough to have for the kids and myself. The apple pie flavor I made last week didn&#8217;t last that much, it was plain sensational  however this flavor is equally as good.</p>
<p>For this Superfood chocolate overnight oats I use some superfood powders:</p>
<ol>

<li><a href="https://amzn.to/2R1Xpob" target="_blank" rel="noopener">Carob:</a> Great source of antioxidants, high in fiber and calcium and helps relieve diarrhea</li>
<li><a href="https://amzn.to/2PMIgH5" target="_blank" rel="noopener">Maca</a>: Enhances energy, stamina, athletic performance, and memory, increases libido and infertility.</li>
<li><a href="https://amzn.to/2NTB1LU" target="_blank" rel="noopener">Lucuma:</a> Packed with vitamins, minerals, antioxidants. Is a low GI sweetener.</li>
<li><a href="https://amzn.to/2S3sTLY" target="_blank" rel="noopener">Cacao nibs:</a> Mood enhancer, high in fiber, antioxidants, magnesium, potassium and iron.</li>
</ol>
<p>All these powders I get online. I have a monthly subscription so I always make sure I never run out. Having a well stock pantry is a must for me.</p>
<p>There are other superfood powders I have purchased that I also add to my smoothies. I will make a recipe and share them with you as well. They are truly the bomb.</p>
<p>Anyways, if you haven&#8217;t tried to make overnight oats yet I urge you to give it a go, there are plain sensational.</p>

										<content:encoded><![CDATA[<p>When I am in need of something sweet I always turn to making some sort of a crisp. They are always super easy to prepare and come together in a flash. When using apples for this type of dessert I tend to never peel them. I like to have the extra fiber and all of it is pretty much in the skin. Granted the apples may have more of a bite to it but I really don&#8217;t mind the texture for this gluten free apple pecan crisp.</p>

<p>From start to finish this crisp prep will be done in just about 15 minutes. Then all you have to do is bake it. I used pecan for the nuts because that is what I had on hand but you can use whatever nuts you prefer. Walnuts and hazelnuts will go great with it.</p>
<p>Sometimes I even make two batches. I leave one already unbake ready to go in the freezer and when I am ready I just bake it for an extra 15 minutes.</p>
<p>I always consume this gluten free apple pecan crisp either for a dessert/snack and sometimes even for breakfast. Mostly always I use maple syrup to sweetened my desserts. I tend to add a bit lower than what recipes called for. I really don&#8217;t like super sweet desserts so baking at home allows me to control the sweetness of them.</p>
<p>Well, not much to say about this super simple, easy and tasty gluten free apple pecan crisp. My kids can&#8217;t get enough each time I make it. It is one of their favorite desserts. If you make it let me know. I hope you like it as much as we do.</p>

<li class="ingredient" itemprop="ingredients">1 tbsp arrowroot powder or cornstarch</li>

<div class="instructions" itemprop="recipeInstructions"><p>Preheat oven to 375 degrees Fahrenheit.</p>
<p>In a <a href="http://amzn.to/2sEEwjP" target="_blank" rel="noopener">large 9x13 dish</a> add the chopped apples. Add the arrowroot powder and combine with the apples.</p>
<p>In your <a href="http://amzn.to/2BGDDKj" target="_blank" rel="noopener">stand mixer</a> or <a href="http://amzn.to/2BEyPVW" target="_blank" rel="noopener">large mixing bowl</a> and the rest of the ingredients. Combine until the mixture comes together. The batter should come together nicely. If you need a tad more maple syrup you can add more.</p>
<p>Top the apples with the mixture. Bake for 30-40 minutes, or until the mixture starts to brown.</p>
<p>Serve as desired.</p>

<p>This gluten free caramel apple tart was just simply the bomb. I think one of my favorite tart I have made. It wasn&#8217;t extremely sweet which is what I enjoyed the most and I didn&#8217;t bother to peel the apples either because I like to have the fiber that provides.</p>
<p>You can use any type of apples you like and you can also peel them. It will take you more time though since not peeling the apples saves you some time.</p>
<p>I believe you make this tart with other types of fruits such as pears and peaches. Perhaps next time I will make one of each.</p>

<p>I love having a mixture of dishes for Thanksgiving. I always have some sort of salad, veggies and greens with a combination of other first course dishes. I wanted to make this apple cranberry pecan salad ahead of time and see if my family would like it. Since apples are in season I wanted to use them and make something more creative.</p>
<p>This Apple cranberry pecan salad was a hit so I am glad I was able to make something new that I could add to my menu for that day.</p>
<p>I also added some cranberries and pecans since they are indicative of this holiday. The crunch of the apples complimented the other ingredients very well and the salad dressing really made it stand out. Super refreshing, easy and delicious.</p>
<p>I used <a href="https://www.truvia.com/products/nectar" target="_blank">Truvia Nectar</a> to sweetened the salad dressing. Truvia nectar is a great ingredient to use in salad dressings whenever you need to sweetened it. For my diabetic readers and those not wanting to have much sugar in their diet this is the perfect ingredient to use. It is also great to use to sweetened drinks like smoothies, use in your coffee, for baking and even cooking. The sky is the limit.</p>
<p>If you are thinking of making something easy, light  and new this coming season I think you will love this apple cranberry pecan salad. It was a hit in my house and it will be a recipe that I will keep making time and time again for sure.</p>

<p>In a <a href="http://amzn.to/2gejLCi" target="_blank">large mixing bowl</a> add the apples cut into strips and add the lemon. Toss to coat to make sure they don't oxidize and become brown. Add the pecans, dried cranberries, and feta cheese. Combine. To serve the salad, place arugula at the bottom of serving plates. Divide the apple mixture between the serving plates followed by the dressing.</p>
<p>Serve immediately.</p>

<p>Oatmeal is one of my kids favorite snacks. They tend to have it either for breakfast of after school so that means I like to increase the protein content even more by sometimes adding chopped nuts as well as some protein powder.</p>
<p>Apples are very indicative of the fall season so I love using them when ever possible. I always get them organic and for this recipe, I didn&#8217;t even peel the apples. I like doing that to make sure I keep all the fiber, vitamins and minerals that comes in the skin. Plus my kids really don&#8217;t mind.</p>
<p>Fall season is one of my favorite times of the year. Not only because the weather is just perfect but because of Halloween.</p>
<p>I am still debating what recipes to come up with for Halloween. I would like to keep desserts sort of on the healthier side so lets see how creative I can get.</p>

Cook over medium to high heat, stirring frequently until it boils. Reduce heat and simmer for 5-10 minutes, or until the oats have softened. Set aside.</p>
<p>On a <a href="http://amzn.to/2czXBJs" target="_blank">skillet</a> place apples, sugar, cinnamon and coconut oil. Cook over medium heat stirring frequently until apples have soften up a bit, it takes about 6-7 minutes.</p>
<p>Add apples, nuts, flax, and protein powder to the oatmeal.  Combine. You may need a bit more milk to serve as well.</p>
<p>Store in a <a href="http://amzn.to/2cmRXee" target="_blank">glass container</a> covered in the refrigerator for up to 5 days.</p>

										<content:encoded><![CDATA[<p>I have been wanting to bake a cake for a few weeks now. Because of school I haven&#8217;t had a chance but over the past weekend I have made a conscious effort to make this gluten free apple rustic cake since I was craving something sweet.</p>

<p>I also wanted to make the cake gluten free so I came up with this version. While baking I totally forgot to add the fat, in this case I wanted to add coconut oil, so I really was hoping the cake turn out good when I realized I totally forgot to add it.</p>
<p>To my surprise, since I almost never forget to add the fat to my baking goods, it turned out great. I think it was the fact that I used coconut flour and this type of flour has a high fat content.</p>
<p>For this gluten free apple rustic cake I used a combination of flours. I used coconut and brown rice flour. These are two of my favorite flours to use when it comes to bake gluten free goodies. They work great for muffins and cake batters.</p>
<p>I almost always use <a href="http://www.bobsredmill.com/shop.html" target="_blank">Bob’s Red Mill</a> flours. I love their flaxseed meal, hulled hemp seeds and many of their healthy products.  Make sure you visit their website. They have anything you will need for your healthy baking and cooking.</p>
<p>For this gluten free apple rustic cake you can also use other type of fresh fruit like peaches and pears instead of apples. A combo of peaches and blueberries would work great so if you like to use that go ahead. I think I will next time I make it.</p>
<p>I hope you like this gluten free apple rustic cake. It is super simple to make and the taste is super awesome even though I forgot to add that fat.</p>

Add the vanilla extract, coconut and brown rice flour, baking powder and baking soda and combine.</p>
<p>Transfer the mixture to the prepared baking pan and arrange apple slices in whatever pattern you prefer. Bake for 40-45 minutes.</p>
<p>Let the cake cool in the pan in a wire rack before unmolding. Serve.</p>
