I simply love grilling. Whenever possible, I like to have grilled vegetable skewers. Having grilled vegetables is one of my favorite ways to have them even though I don’t get to grill as much as I would want to. I find that grilled vegetables are way more flavorful and juicy, especially on a charcoal grilled.

Since my family hardly eats any meat or chicken, having grilled vegetable skewers is perfect for us. I always like to find different ways to served vegetables and the flavor the charcoal gives to the vegetables is just very unique and tasty. Everyone enjoys the distinct flavor it gives to the vegetables.

I decided to use Kingsford® Original Briquets. I chose my favorite charcoal, Kingsford Original because it’s ready in 15 minutes and has a long burn time besides that it lights quickly.

Believe or not grilling on a charcoal grill it is easier than you think. Here are a few tips for those that have never tried it before.

Before you light the briquets in your charcoal grill just make sure:

If you have any leftover ash in your grill dispose of it. Link here on how to do that.

Clean the grill grates.

Place the briquets in a mountain shape and light them up.

Once the briquets have been burning for 15 minutes and are a pale grey color they are ready to be used. Spread them out and place the grill grate over the briquets.

Preheat your grill grates and oil them slightly to make sure your food won’t stick to it. Now your grill is ready for action!

I use metal skewers that I find work best. Wooden skewers turn to burn and brake.

Once I was done grilling, the vegetables skewers were gone in no time. I wish I had doubled the batch. If you have leftover veggies you can serve them the next day on a salad or just simply as a side dish.

Fall is a great season to get creative and use many of the vegetables available at grocery stores. Make your own combinations and use your favorite veggies. Any vegetable combination will do.

I hope you try to give charcoal grilled a go. It is the authentic way to grilling. The flavor it brings to your food is just sensational. Once you start grilling this way you will never go back!

Enjoy!

This recipe is sponsored by Florida’s Natural. All opinions are my own. “Thank you for continuing to support the brands that make Eat Good 4 Life possible”

One of my favorite things to do on hot summer days is make frozen desserts. There is nothing like making your own sweet treats and having them on demand, ready to go in your freezer. My latest go-to? This Raspberry Peach Lemonade Sorbet, which is just perfect for the hot days ahead.

This sorbet takes literally 5 minutes to prepare, which is made easy by using Florida’s Natural Lemonade as the base, a much easier alternative to simple syrup. Fresh raspberries, peaches and a touch of maple syrup is all you need to make this recipe.

You don’t even need an ice cream maker! Just mix all the ingredients together and let sit for 2-3 hours in the freezer. Then, it is ready to eat.

As I mentioned, for this recipe, I used Florida’s Natural® Lemonade with Raspberry & Peach. You can find Florida’s Natural Lemonade in six delicious flavors: traditional Lemonade, Lemonade with Pomegranate, Lemonade with Strawberry, Lemonade with Raspberry & Peach, Lemonade with Blackberry and Lemonade Iced Tea. Whatever flavor you choose, all of Florida’s Natural Lemonades offer a refreshing great taste. They are never concentrated and have no artificial ingredients or preservatives.

Plus, when you buy Florida’s Natural Lemonades, you’re helping to support Alex’s Lemonade Stand Foundation, which funds childhood cancer research. An even sweeter reason to sip!

Making your own sorbet is fun and easy and it can certainly be made in a flash. Homemade varieties taste way better than store bought with no thickeners, stabilizers and nonsense ingredients. I hope you venture out and make your own. You surely won’t be disappointed.

I hope you get to try this raspberry peach lemonade sorbet. It is one of a kind.

Enjoy!

It has been a hectic last 2-3 weeks with PA school. We have just got done completing our summative week and I hope everything went well for me.

We got 2 physical encounters with standardized patients, which I think I did really well, and then one crazy written exam. A lot of you wished me well and sent positive energy and vibes so I hope that worked on my favor. I really want to be done with PA school, travel a little, enjoy my family and eventually start working.

I just need a few months to recharge my energy and eventually start my career as a PA. It has been a very busy, overwhelming past 2 yrs so I think a break is in order.

Anyways, onto this amazing chocolate peanut butter overnight oats bowl recipe.

I love making overnights oats not only because they are super easy to prepare, like 10 minutes max, but because it is super healthy, feeling and tastes super awesome.

I have made a blueberry and coconut overnight oats version that it is also magnificent. If you have not tried to make overnight oats yet I really encourage to do so. I think you will not be dissapointed.

As you may know, this coming summer I am going back to my beloved Spain for almost 2 1/2 months. While in Spain we are going to do some traveling and for a few days I will get to go to Morocco.

I will be going with my best friend, but can you believe that we will be in the Sahara desert in July? We are going to melt but that was the only time that we could make it. We are going to be taking cooking classes and learning about Moroccan cuisine. I really can’t wait.

I will be posting a lot of Moroccan recipes upon my return as well as a lot of pictures and things to do if you ever make it of that part of the world. Stay tuned for that. I think Morocco is going to be epic.

Anyways, I leave you with this amazing chocolate peanut butter overnight oats that I hope you get to try soon. Super easy, healthy and delicious to say the least.

Enjoy!

I love making smoothies on a regular basis, not only because they are super easy to make but you can add pretty much anything to them. Most often than not I like to have them for breakfast but sometimes I also consume them after working out or even as a snack. This banana peanut butter smoothie is a great contender for an after work out drink, full of protein and it tastes just like a milk shake.

Have you tried to make your own smoothies instead of purchasing them at the store? Smoothies tend to be quite costly and ingredient quality lacks sometimes. I feel much better when I can make my own and control what goes in. This banana peanut butter smoothie is the prime example.

Today I was able try Burt’s Bees® new product, Burt’s Bees Protein Healthy Radiance – Vanilla and add it to my smoothie.

I love the fact that I can use protein powder that I can trust, especially given the fact that my kids are the ones that also consume smoothies I make.

Burt’s Bees protein blend was carefully formulated with five protein sources Pea, Rice, Flax Seed, Sunflower Seed, and Oats to achieve high digestibility and a complete essential amino acid profile.

Nature is incredibly resilient and we want that same strength and flexibility in our own lives. That’s why they tapped some of nature’s most powerful ingredients to support our nutrition needs.

My kids are both growing but are involved in sports. Anything that I can feed them with extra protein is well received, especially if it tastes like something sweet they would like like a milk shake.

If you haven’t started making your own smoothies it is something that takes no longer than 5 minutes so I hope you try it soon. If you want to start getting into healthy habits making smoothies is an easy way to start.

Enjoy!

I love making popsicles over the summer. I actually make them through out the year but when it gets warmer I tend to make them even more. These high protein chocolate cherry popsicles are great for my kids as a snack not only because they are healthy and nutritious but they are super easy to make.

Popsicles is one of my favorite things to make when it comes to making snacks through any time of the year and the fact that you can make endless variations is key for us. We never get bore of popsicles. My kids pretty much enjoy any flavor I make for them, there is not much that can go wrong when making popsicles so I really urge you to make your own! Much more economical and healthy that store bought.

For the protein of choice I used Burt’s Bees® new product, Burt’s Bees Protein Healthy Radiance – Chocolate. Burt’s Bees Protein offers three unique blends: Protein Daily, Protein + Healthy Radiance and Protein Gut Health. The end result is a delicious collection that allows you to drink-in the best of nature, so you’ll feel ready to embrace everything the day has to offer

Each of their formulas includes five organic protein sources: Pea, Rice, Flax Seed, Sunflower Seed and Oat, to achieve high digestibility and a complete essential amino acid profile. We’ve also included vitamins from real fruits and vegetables to provide up to 25% of your recommended daily intake (or daily value).

I love getting frozen cherries, thus you can use any time of the year. Using cherries makes a tasty combination, however, if you like you can use any other fruit of your choice. Anything goes really.

My kids go crazy when I make popsicles so I always try to sneak good nutritious ingredients for them to consume while enjoying them. I think is just plain genius!

I love for them to have high protein healthy snacks. Not only it keeps them full longer but it actually helps their little bodies since they are on a growing phase.

What a better way to begin the holiday season than with these Christmas energy bites. These are actually to die for. I recently had a ginger bread bar and thought of making something similar but in energy bite form. I think my version is way better. Less ingredients, no bake, gluten free, dairy free, and still delicious.

I was pleasantly surprise with the flavor of these Christmas energy bites. I wanted to mimic ginger bread flavor so I made my own spice mixture with cinnamon, nutmeg, cloves and cardamon.

The base of these energy bites are just dates, unsweetened coconut flakes and walnuts. After obtaining the base you can later add any flavorings of your choice to make them different, like in this case, I used the spices to make them indicative of the holidays.

Christmas season is known to be cookie season. I like to keep my recipes on the healthy side. If you are looking to make some cookies over the holidays I really suggest starting with these or least try them. Not only they are no bake, but also gluten free and dairy free.

For these Christmas energy bites you will need some liquid to made the batter come together. I used Silk Unsweetened Almond Milk for it. I always use unsweetened varieties so that I can control the sweetness plus I really don’t like tasting any sweetness when having a plane glass of it.

I have seen recipes that use maple syrup to bring energy bites together but by using dates there is no point in adding any more sweetness to the recipe. Dates are naturally sweet already.

You can also sign up to receive Silk newsletters for coupons. If you use their products you should take advantage of the many coupons they offer. They have a wide variety of new products so I am sure you will put them to good use.

These Christmas energy bites are something that I will be making again around the holidays to give away to friends and relatives. I think these will be a hit so if you like making your own energy bites and keeping your dessert on a healthier side I highly recommend making these. Very unique and delicious.

Enjoy!
