Not only are these vegan orange creamsicle popsicles super easy to make, but they are also delicious – and a great snack for kids!

Lately, I haven’t had a chance to bake any sweets. Truthfully, I don’t feel like turning on the oven with the days being so hot. Instead, I’ll be making refreshing snacks—like these popsicles—for most of the summer.

To make the popsicles I used Florida’s Natural® Brand Orange Juice, which is not-from-concentrate and made entirely in the United States. I also used fresh oranges because I love little chunks of fruit in my popsicles. You can omit the oranges if you like, but I think they are a nice addition to the popsicles.

Whenever I purchase orange juice, I make sure I buy Florida’s Natural because it’s made entirely with oranges grown by real, Florida citrus farmers who care deeply about their product quality. With Florida’s Natural, you get the best quality juice that actually tastes real, and not artificial like many other brands.

In order to make these orange creamsicles vegan I used coconut cream. You can also use heavy cream if you don’t have coconut cream—or you don’t have to make them dairy free. They will turn out equally good.

If you make popsicles often, I also suggest buying a popsicle mold that holds at least 12 pops. I actually have a couple of popsicle molds since I make them all throughout the summer. My kids love them and consume them all the time, so I always make sure I keep my freezer well-stocked. It is the perfect snack for the little ones.

These vegan orange creamsicle popsicles are healthy, refreshing, super tasty and much more economical than store-bought varieties. I hope you give these a try.

Enjoy!

I have never thought of making horchata before. It really didn’t cross my mind, however, today I was able to finally make this awesome Spanish horchata that I always consume whenever I get to go back to my home land Spain.

At last I am able to post a recipe!

For those that don’t know I started graduate school 3 weeks ago. It is a very intense program so besides studying my behind off and not sleeping much cooking and baking have suffered a bit.

This weekend however, I intend to tackle a few recipes. After all, it helps me relax and decompress so I really need to get back into the kitchen for a few hours. Will see what I can come up with!

To be honest I thought this recipe was going to be more difficult. If you have made nut milk before it is exactly the same thing. You also have to soak the tiger nuts overnight and then just pretty much run them through your blender.

I think the job of filtering the pulp gets a lot easier with a nut bag but you can also use cheese cloth if you have that instead. Either way it is easy.

As far as the pulp is concerned, I actually don’t discard it. I keep it so that I can add it to smoothies however you can also add it to muffin, pancake and waffle batter. Just a few ideas because on how you can use the pulp because I really hate throwing food away.

Making horchata and nut milk it is easier than you think. I really hope you give it a go. You are going to be pleased.

To obtain this homemade version of horchata recipe make sure you visit my friends at Nuts.com. You will be able to shop for any healthy ingredients you may need for your cooking and baking such as nuts, dried fruits, grains, flours and much more.

Enjoy!

I think this was my first time making almond butter and it is not going to be my last. I actually could have used just raw almonds straight on the food processor but I wanted to get more creative and make this maple roasted almond butter. It was just plain sensational.

There is not much as far as instructions is concerned when it comes to making your own nut butters. I have only made it with peanuts before but you can even use seeds if you like. Sunflower butter is another popular recipe so if you are allergic to nuts use seeds instead.

Also, depending on your food processor the nut butter make take a bit longer. Normally about 8-12 minutes. I have a very powerful food processor so mine was done in 8 minutes sharp.

I also like my nut butter on the chunky side but the more you let it be in the food processor the smoother it will get. Also, I only added 3 tbs of maple syrup when I roasted the almond but later, once the almond are in the food processor you can add more maple syrup if you like. I did!

Making your own nut butters is extremely easy. Again, if you would like to skip roasting the almond and skip that step all together just pulse the raw almonds.

At last, it is starting to get warmer outside. Right around this time is when I like to start making more salad recipes. Today was my first time experimenting with oranges — using orange segments in the salad and orange juice for the dressing. It turned out sensationally! I know that I am going to be making this Avocado Orange Salad with Orange Honey Vinaigrette time and time again.

I’ve partnered with Florida’s Natural this year, and their juice is what I used as a base for the vinaigrette on this salad. As someone who cares about where my food comes from, I love that not-from-concentrate Florida’s Natural® Orange Juice is made entirely in the U.S. by citrus farmers who care deeply about the quality of their product. Other companies import their oranges, and I love that with Florida’s Natural, I know where the juice is coming from. Something like that gives me peace of mind.

Citrus ingredients go really well in salads, but up until today, I had never tried them myself. Boy, was I missing out.

The orange honey vinaigrette turned out superb. It literally took just 1 to 2 minutes to make. All I needed to do was combine the ingredients in a small glass jar I had on hand and I was done. So super fast to whip up your own homemade salad dressing right in your kitchen!

You can keep this vinaigrette in your fridge and use it with other salad combinations. I actually made triple the batch myself because, like I said, we have started to eat salads pretty often. I like to change my salad dressings from time to time, so having this salad with this salad dressing was just perfect.

I love the fact that I have partnered with Florida’s Natural and that I’m able to experiment in the kitchen with their delicious-tasting juice. Through my partnership with them, I’ve learned that their juice is made from 100 percent Florida-grown oranges, which gives it that fresh-from-the-grove taste.

If you like oranges and orange juice as much as I do, be prepared. I am going to be bringing some more awesome, healthy, original recipes your way. There are so many different recipes that I can create with this amazing ingredient!

If you are into refreshing, tasty, easy salad recipes, you have to try this Avocado Orange Salad with Orange Honey Vinaigrette. It literally takes a very short time to put it together, and the best part is the salad dressing, so I hope you get to try it soon.

Enjoy!

Holy smokes, I can’t say enough good things about these superfood energy bites, they are just plain sensational. I wish I had doubled the batch when I made them but unfortunately I didn’t. Next time I make them, for sure I will. They are to die for!

These superfood energy bites were great for my kids lunch boxes as well as for me to grab and eat on the go. Sometimes I don’t have much time to whip up a smoothie or eat anything else so I make sure that at least once a week I get to make things of this nature so when the time comes and I have to run out the door I have something healthy to snack on.

What I like about these superfood energy bites is that not only they are super easy to make but that you can use other ingredients and make them with nuts and dried fruits of your choice.

I happen to buy some golden berries the other day that were on sale so I put them to use. I don’t buy golden berries as much as I would want to because they are a bit pricy but whenever they come on sale I take advantage and buy a few packages.

I have seen many energy bites recipes using added sweeteners like honey and maple syrup but to be honest I couldn’t possibly do that because using dried fruits and medjol dates makes energy bites sweet enough. Using honey and maple syrup would be way to sweet for my liking.

When I start P.A school back in May I will be making things of this nature 24/7. Well, I know I am not going to have much time since I will have to study a lot but at least one day a week I will devote part of it to cooking and baking to make food for the week ahead. We all know how nasty cafeteria food can be.

This is by far my favorite recipe for energy bites. These bites are superfood because of the golden berries that are full of fiber, B-vitamins, protein and show many digestive, anti-inflammatory, and antioxidant benefits. They also have chia seeds which are also considered a superfood.

These superfood energy bites will also lower your cholesterol naturally since I added flaxseed meal which is rich in soluble fiber. Soluble fiber works magically to excrete excess cholesterol from the body.

All in all, these bites are to die for so I hope you get to try them soon!

Enjoy!

You can keep these refrigerated in a covered glass container for up to 1 week.

I am not much of a coffee person so when ever I can I like to make my own tea drinks. This vegan green tea latte is something that I don’t enjoy as much as I would want to so today I actually quadrupled the batch so that I can have this tasty drink all through out the week.

I have been cooking and baking with green tea powder for a long time now. After all, my first cookbook was about this amazing ingredient.

Matcha powder is a great ingredient to incorporate to your smoothies and drinks so whenever possible I love to add it. I even incorporate it when making popsicles…they taste so great. Is like having green tea ice cream but in a popsicle form. So convenient.

Keep in mind that not all Matcha powders are made equal. They are certain Matcha brands better than others. If you are thinking of purchasing it I highly recommend you do from Nuts.com Just make sure that once you have opened it you keep it in your refrigerator. This Matcha powder will give you the taste, and color you are looking for.

Matcha powder is one superfood I like to have stocked in my pantry so I hope you give it a try. It has very healthy potent properties.

If you would like this easy vegan green tea latte make sure you visit my friends at Nuts.com Make sure you browse around as you will find all the ingredients you need to make your healthy cooking and baking recipes. From nuts, seeds, flours, nuts butters to much more.

Enjoy!
