<p>Summer is here and baking is something that I try to avoid in the hot summer months. That is why I came up with these No-Bake Strawberry Lemonade Cheesecakes which are perfect when you just don’t want to turn on your oven. No bake, easy to make, and delicious. I just made a batch and my family is already asking to have them again next week–they are that good!</p>

<p>What I love about these no-bake cheesecakes is that they only require a few ingredients and come together in minutes. And the best part is that for this recipe you don&#8217;t have to turn on your oven. How great is that?</p>
<p>The recipe filling is made from a mixture of sweetened condensed milk, cream cheese and <a href="https://bit.ly/3QDKOal" target="_blank" rel="noopener">Florida’s Natural<sup>®</sup> </a>Brand Lemonade, which makes the filling very creamy and silky. If you would like to use maple syrup or honey instead of the condensed milk, you could. I wanted to try with something that was more of a creamy, silky consistency, and sweetened condensed milk was the perfect ingredient to achieve this texture.</p>
<p>These individual cheesecakes can be put into any size serving dish you like. How many servings you get will depend on the size of the jars you use. I had old glass yogurt containers, so I used them for these individual cheesecakes, but you can use any type of jars you like.</p>
<p>I normally make this type of dessert at night and ahead of time so that they can sit in the fridge overnight and be nice and cold the next day.</p>
<p>These individual cheesecakes are perfect for a summer BBQ, a family gathering or even for any 4<sup>th</sup> of July parties you may be hosting. These no-bake cheesecakes are sweet, bright and have a fabulous, tangy flavor.</p>
<p>To get this flavor, I used Florida’s Natural Brand Lemonade. Florida’s Natural Lemonades are a family favorite of ours: delicious and refreshing on their own, or used in marinades, salad dressings or desserts, like these cheesecakes! </ul>
<h3>For the Cheesecake:</h3>
<ul>
<li class="ingredient" itemprop="ingredients">16 oz cream cheese, room temperature</li>
<li class="ingredient" itemprop="ingredients">14 ounce can sweetened condensed milk</li>
<li class="ingredient" itemprop="ingredients">1/2 cup Florida’s Natural® Brand Lemonade</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon pure vanilla extract</li>
<li class="ingredient" itemprop="ingredients">2 cups hulled and chopped strawberries</li>
</ul>
<h3>For the Garnish:</h3>
<ul>
<li class="ingredient" itemprop="ingredients">whipped cream</li>
<li class="ingredient" itemprop="ingredients">strawberries</li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><p>Evenly divide the crumbs between 6 individual serving dishes, this will be the bottom crust layer.</p>
<p>In a large bowl with a <a href="https://amzn.to/3aPZBOF" target="_blank" rel="noopener">hand mixer</a>, beat cream cheese for 2-3 minutes. Add in sweetened condensed milk mix until smooth.</p>
<p>Add in Florida’s Natural® Brand Lemonade and vanilla and beat for an additional 2-3 minutes until smooth and creamy.</p>
<p>Evenly spoon cream cheese mixture into prepared serving dishes. Add chopped strawberries and repeat layer. Refrigerate for at least 4 hours.</p>
<p>Before serving, top with whipped cream and strawberries.</p>

<p>Smoothie bowls tend to be on bit thicker than regular smoothies, or at least that is how I make them, otherwise all my toppings sink to the bottom.</p>
<p>Smoothie bowls are a great way to start the day or even to have as a snack. The variations are endless and on this one I used things I had on hand. We are loving hemp hearts right now. Then I added some chia seeds, cacao nibs and fresh fruit that I always have on hand.</p>
<p>Truly the sky is the limit when it comes to making smoothie bowls. Since Valentine&#8217;s Day is just around the corner I figure I can make something that is healthy, easy and quick.</p>
<p>As some of you know, I don&#8217;t have much time on my hands lately. In 4 months my life will be way better and have a switch for the best since I will be graduating from Physician Assistant school and be able to continue with my normal life. Being a mom, work and carry on with my life more or less.</p>
<p>Anyways, I have another healthy, quick, dessert that I made over the weekend that I want to post very soon. I always make double the batch whenever I am baking or cooking so that we can have it for several days. Not necessarily concurrent days but at least another time throughout the week so that it doesn&#8217;t seem to repetitive that whe are eating the same thing over and over.</p>
<p>Anyways, start making your own smoothie bowls. I know once you start you won&#8217;t be able to stop. So healthy, good and easy.</p>

<p>Healthy snacking is what I am all about, specially when it comes to snack at work or in school. <p>These no bake pistachio cookies not only are extremely easy to make but they are healthy. These are definitely a boost of energy. They are also gluten free and vegan so for those following especial diets this are a great treat.</p>
<p>Nuts are one of my favorite ways to snack because they are full of protein, vitamins and minerals. I don&#8217;t like to indulge on empty calories so when ever possible nuts are the way to go for me and my family when it comes to snacking. Did you know?</p>

<p>Add the dates to your food processor and pulse until it resembles coarse bread crumbs. Add the rest of the ingredients and pulse until the mixture comes together.</p>
<p>Form little round cookies.</p>
<p>Dip each cookie in chocolate and place in the prepared baking sheet. Sprinkle the chocolate with the chopped pistachios. Repeat until you don't have anymore dough.</p>
<p>Place in the freezer for about 30 minutes until the chocolate solidifies. Store cookies in the refrigerator.</p>

										<content:encoded><![CDATA[<p>It has been quite a bit of time since I had my mind set on making a no bake chai spice pie. Yesterday it was the day and I couldn&#8217;t  have been happier with the result. Much better than anticipated.</p>

<p>I was afraid the filling mixture wouldn&#8217;t turn out as I wanted it to but to my surprise it actually worked better than expected.</p>
<p>I love chai spice flavor anything. I am thinking of making a sponge cake with this flavor as well as the frosting. I have not made a sponge cake in forever and since my birthday is just around the corner I think this type of cake would be the perfect contender.</p>
<p>I am probably going to make some ice pops this flavor as well. I love making my own ice pops around this time of year. They are so easy and versatile and I believe my kids will enjoy them too.</p>
<p>Anyways. I kept the base of the pie quite simple with only 2 ingredients. I actually have a <a href="https://www.eatgood4life.com/halloween-coconut-date-bites/" target="_blank" rel="noopener noreferrer">recipe for energy balls</a> just using these two ingredients. The mixture is delicious just by itself so if you like to make a bit more and make balls with it go ahead. I did so I could have some to take for school during the week.</p>
<p>I am planning on making more no bake pies this summer. I will be using the same base for the filling. I think the sky is the limit when using cashews to make vegan pies. I intent to try one with a lemon/lime flavor. I love lemon anything  as well so I think that will work well.</p>
<p>Anyways, I won&#8217;t bored you any further with none of my recipe ideas so I hope you get to try this no bake chai spice pie that it is vegan and gluten free. It is perfect for any gathering or healthy dessert.</p>

<div class="instructions" itemprop="recipeInstructions"><p>In a <a href="http://amzn.to/2q5HDvC" target="_blank" rel="noopener noreferrer">food processor </a>add the crust ingredients and pulse until you obtain a mixture that will adhere together.</p>
<p>Transfer the mixture to a removable pie pan of your choice. I used a <a href="http://amzn.to/2qHZOu9" target="_blank" rel="noopener noreferrer">rectangular one.</a>&nbsp;Press the mixture to the bottom of the pan without going up the sides.</p>
<p>Add the filling ingredients to the food processor and pulse until you obtain a homogenous mixture. About 2-3 minutes.</p>
<p>Transfer the mixture to the pan and spread evenly. Arrange the chopped pecans around the edge of the pie and freeze for about 3-5 hrs.</p>
<p>Take the pie out of the freezer and drizzle the chocolate over the pie and serve.</p>

<p>I think my friends are quite lucky, these no bake lime coconut cookies  will be included in their goodie bags. I am making several recipe for them this season so I think they will very pleased. They will all be gluten free and vegan since some of my friends follow especial diets.</p>
<p>Anyways, these no bake coconut lime cookies are quite unique. I made the batter with a mixture of gluten free oats, coconut and almond flour as well as hulled hemp seeds. It is my first time using coconut flour without baking it first. I have seen many recipes using coconut flour for no baked goods so I actually wanted to try at least once. I am glad I did. Not only the texture is unique but it also adds some fiber to the cookies.</p>
<p>I actually love making no bake sweets. My friends thought I would be in the kitchen for days on end but because I decided to make all my goodies no bake this season I was done in one day. More convenient and easier than baked ones. I think my food processor almost burnt down this time around I was using it so much. Oh well, I am glad it didn&#8217;t because I don&#8217;t think I could afford getting a new one right now.</p>
<p>When making sweet treats I almost always use <a href="http://www.bobsredmill.com/shop.html" target="_blank">Bob’s Red Mill</a> flours. I love their flaxseed meal, hulled hemp seeds and many of their healthy baking products.  To make these cookies today I used their <a href="http://www.bobsredmill.com/organic-coconut-flour.html?gclid=CLfQopjYitECFVVYDQodgwMBbQ" target="_blank">coconut, and almond flour</a> as well as their unsweetened shredded coconut and hull hemp seeds. Make sure you visit their website. They have anything you will need for your healthy baking and cooking. Their products are truly top notch.</p>

Add the remainder of the ingredients except the chocolate chips and pulse until the mixture comes together. If it doesn't just add 1 tablespoon of water at a time until it does.</p>
<p>Line a <a href="https://www.amazon.com/s/ref=as_li_ss_tl?_encoding=UTF8&amp;camp=1789&amp;creative=390957&amp;field-keywords=baking%20sheet&amp;linkCode=ur2&amp;rh=i%3Aaps%2Ck%3Abaking%20sheet&amp;tag=eago4li0c-20&amp;url=search-alias%3Daps&amp;linkId=CQMHPGOPWJ26M6A2">baking sheet</a> with <a href="https://www.amazon.com/s/ref=as_li_ss_tl?_encoding=UTF8&amp;camp=1789&amp;creative=390957&amp;field-keywords=unbleached%20parchment%20paper&amp;linkCode=ur2&amp;rh=i%3Aaps%2Ck%3Aunbleached%20parchment%20paper&amp;tag=eago4li0c-20&amp;url=search-alias%3Daps&amp;linkId=I5SWWGZLPIJN3TN2">unbleached parchment paper</a>. With your hands make little balls and flatten them out and place in the prepared baking sheet.</p>
<p>Melt the chocolate in a microwave save bowl at 45 seconds intervals until completely melted.</p>
<p>Dip each cookie half way and place back in the tray. Repeat with all the cookies and place in the freezer for a few minutes until the chocolate solidifies.</p>

										<content:encoded><![CDATA[<p>What a better way to begin the holiday season than with these Christmas energy bites. These are actually to die for. I recently had a ginger bread bar and thought of making something similar but in energy bite form. I think my version is way better. Less ingredients, no bake, gluten free, dairy free, and still delicious.</p>

<p>I was pleasantly surprise with the flavor of these Christmas energy bites. I wanted to mimic ginger bread flavor so I made my own spice mixture with cinnamon, nutmeg, cloves and cardamon.</p>
<p>The base of these energy bites are just dates, unsweetened coconut flakes and walnuts. After obtaining the base you can later add any flavorings of your choice to make them different, like in this case, I used the spices to make them indicative of the holidays.</p>
<p>Christmas season is known to be cookie season. I like to keep my recipes on the healthy side. If you are looking to make some cookies over the holidays I really suggest starting with these or least try them. Not only they are no bake, but also gluten free and dairy free.</p>
<p>For these Christmas energy bites you will need some liquid to made the batter come together. I used <a href="https://tracking.tapinfluence.com/trk/ecG8d/eDztw/c?p=o1LtN&amp;i=rBe2o&amp;r=lA1BYd1QZH%2Bc2bNAbRFBAIPFdNBTCGYJJXerPqomVxTuaMMsjSeaCA%3D%3D" target="_blank" rel="nofollow">Silk Unsweetened Almond Milk</a> for it. I always use unsweetened varieties so that I can control the sweetness plus I really don&#8217;t like tasting any sweetness when having a plane glass of it.</p>
<p>I have seen recipes that use maple syrup to bring energy bites together but by using dates there is no point in adding any more sweetness to the recipe. Dates are naturally sweet already.</p>
