I am sure you have seen many recipes for overnight oats however these superfood chocolate overnight oats are quite unique. Not only I have used some typical ingredients to increase the protein content but I have used a few powerful elements that bring the recipe to the next level.

I have recently started researching and using more superfood powders. While there might be a bit pricy they tend to last a long time. I used them mostly to add them to my smoothies as well as with overnight oats recipes. They are the perfect healthy addition.

I started working at the beginning of September so every single weekend I plan my meals for the week. Breakfast always consist of some sort of overnight oat recipe so have to make sure I change the flavor from week to week.

When I make overnight oats, I always make enough to last for the whole week, especially enough to have for the kids and myself. The apple pie flavor I made last week didn’t last that much, it was plain sensational however this flavor is equally as good.

For this Superfood chocolate overnight oats I use some superfood powders:

Baobab: Rich in vitamin C and believed to have antimicrobial, antiviral, anti-oxidant, and anti-inflammatory properties.

Carob: Great source of antioxidants, high in fiber and calcium and helps relieve diarrhea

Maca: Enhances energy, stamina, athletic performance, and memory, increases libido and infertility.

Lucuma: Packed with vitamins, minerals, antioxidants. Is a low GI sweetener.

Cacao nibs: Mood enhancer, high in fiber, antioxidants, magnesium, potassium and iron.

All these powders I get online. I have a monthly subscription so I always make sure I never run out. Having a well stock pantry is a must for me.

There are other superfood powders I have purchased that I also add to my smoothies. I will make a recipe and share them with you as well. They are truly the bomb.

Anyways, if you haven’t tried to make overnight oats yet I urge you to give it a go, there are plain sensational.

I love chocolate and lately I have been trying to incorporate it even on some savory recipes. Granted I am not using the sweet varieties but the darkest chocolate I can find. I prepared this high protein chocolate smoothie bowl as an after school snack on Friday and my kids couldn’t get enough of it.

Smoothie bowls tend to be on bit thicker than regular smoothies, or at least that is how I make them, otherwise all my toppings sink to the bottom.

Smoothie bowls are a great way to start the day or even to have as a snack. The variations are endless and on this one I used things I had on hand. We are loving hemp hearts right now. Then I added some chia seeds, cacao nibs and fresh fruit that I always have on hand.

Truly the sky is the limit when it comes to making smoothie bowls. Since Valentine’s Day is just around the corner I figure I can make something that is healthy, easy and quick.

As some of you know, I don’t have much time on my hands lately. In 4 months my life will be way better and have a switch for the best since I will be graduating from Physician Assistant school and be able to continue with my normal life. Being a mom, work and carry on with my life more or less.

Anyways, I have another healthy, quick, dessert that I made over the weekend that I want to post very soon. I always make double the batch whenever I am baking or cooking so that we can have it for several days. Not necessarily concurrent days but at least another time throughout the week so that it doesn’t seem to repetitive that whe are eating the same thing over and over.

Anyways, start making your own smoothie bowls. I know once you start you won’t be able to stop. So healthy, good and easy.

Enjoy!

If you have been following me for a while you know that I love making popsicles. These mint chocolate popsicles are a slightly different take since I added a powerful ingredient.

If you like making popsicles, which I do, especially over the summer, you are going to love these mint chocolate popsicles. I added spirulina.

It is said to be used for attention deficit-hyperactivity disorder (ADHD), stress, and fatigue. It also has protein, B-vitamins and iron. Besides using it for these popsicles you can add it to yogurt and smoothies. It has an intense green color as well as flavor, however, by mixing it with other ingredients it helps to mask its. My kids can’t even tell there is spirulina in any of the treats I make with it.

Making popsicles is a great way to introduce spirulina to your friends and family as it gives the popsicles a beautiful green tint and the flavor of the spirulina is not noticeable at all.

If you would like to have the recipe visit Nuts.com and go directly to the mint chocolate popsicles. You will be able to purchase the spirulina there and many more healthy ingredients as well. They have nuts, flours, spreads, treats and much more. They also cater especial diets like gluten free , vegan, dairy free etc
