I love to start the day with something healthy, full of fiber and nutritious. When it comes to overnight oats variations are endless. Today I made this chocolate peanut butter overnight oats that my kids certainly enjoyed. Fast, easy and delicious!</p>

<p>At last I get to post a recipe.</p>
<p>It has been a hectic last 2-3 weeks with PA school. We have just got done completing our summative week and I hope everything went well for me.</p>
<p>We got 2 physical encounters with standardized patients, which I think I did really well, and then one crazy written exam. A lot of you wished me well and sent positive energy and vibes so I hope that worked on my favor. I really want to be done with PA school, travel a little, enjoy my family and eventually start working.</p>
<p>I just need a few months to recharge my energy and eventually start my career as a PA. It has been a very busy, overwhelming past 2 yrs so I think a break is in order.</p>
<p>Anyways, onto this amazing chocolate peanut butter overnight oats bowl recipe.</p>
<p>I love making overnights oats not only because they are super easy to prepare, like 10 minutes max, but because it is super healthy, feeling and tastes super awesome.</p>
<p>I have made a <a href="https://www.eatgood4life.com/blueberry-coconut-overnight-oats/" target="_blank" rel="noopener">blueberry and coconut overnight oats version</a> that it is also magnificent. If you have not tried to make overnight oats yet I really encourage to do so. I think you will not be dissapointed.</p>
<p>As you may know, this coming summer I am going back to my beloved Spain for almost 2 1/2 months. While in Spain we are going to do some traveling and for a few days I will get to go to Morocco.</p>
<p>I will be going with my best friend, but can you believe that we will be in the Sahara desert in July? We are going to melt but that was the only time that we could make it. We are going to be taking cooking classes and learning about Moroccan cuisine. I really can&#8217;t wait.</p>
<p>I will be posting a lot of Moroccan recipes upon my return as well as a lot of pictures and things to do if you ever make it of that part of the world. Stay tuned for that. I think Morocco is going to be epic.</p>

<p>Smoothie bowls tend to be on bit thicker than regular smoothies, or at least that is how I make them, otherwise all my toppings sink to the bottom.</p>
<p>Smoothie bowls are a great way to start the day or even to have as a snack. The variations are endless and on this one I used things I had on hand. We are loving hemp hearts right now. Then I added some chia seeds, cacao nibs and fresh fruit that I always have on hand.</p>
<p>Truly the sky is the limit when it comes to making smoothie bowls. Since Valentine&#8217;s Day is just around the corner I figure I can make something that is healthy, easy and quick.</p>
<p>As some of you know, I don&#8217;t have much time on my hands lately. In 4 months my life will be way better and have a switch for the best since I will be graduating from Physician Assistant school and be able to continue with my normal life. Being a mom, work and carry on with my life more or less.</p>
<p>Anyways, I have another healthy, quick, dessert that I made over the weekend that I want to post very soon. I always make double the batch whenever I am baking or cooking so that we can have it for several days. Not necessarily concurrent days but at least another time throughout the week so that it doesn&#8217;t seem to repetitive that whe are eating the same thing over and over.</p>
<p>Anyways, start making your own smoothie bowls. I know once you start you won&#8217;t be able to stop. So healthy, good and easy.</p>

										<content:encoded><![CDATA[<p>Last week I got the chance to make my usual gigantic batch of granola. It is not often that I do but when I get to make it I make at least about 20-30 lbs. I have a huge professional bowl that is perfect for my large batches so using some for the pears, yogurt and granola bowl was just perfect.</p>

<p>Today I wanted to have something especial and more fancy for breakfast. Nothing too elaborate but different.  I decided to add some really ripe pears to my classic bowl of yogurt and granola and voila.</p>
<p>I actually thought about poaching the pears but because they were so soft and juicy I decided to have them just like that. Besides, since I didn&#8217;t poach them they kept their nutrients even more so a win win for me.</p>
<p>There endless way you can serve granola. My family goes through granola like there is no tomorrow. We have it with yogurt for breakfast and sometimes as a treat we mix it in with ice cream. You can also have it with your classic milk of choice, either way is great really.</p>
<p>I have made lots of versions for granola. Once you start making your own granola, since not only it is super easy to make, it is way more economical. Homemade granola is also by far superior than any other store bought brand I have purchased in the past. Even gourmet granola.</p>

<p>I am waiting to take my exam in two weeks to be able to get into the kitchen again and make some of the recipes I have been wanting to try for quite some time. I have a huge list so will see which ones I will get to tackle first.</p>

<p><strong>NOTE: If your pears are not ripe you can poach them with some cinnamon, anis star, a bit of sugar and water for 20 minutes. Just make sure you peel the pears and they are covered with water.</strong></p>

<p>On another note, my school adventure pretty much starts today. I am moving all the way up North to Poughkeepsie and to say that I am super excited is an understatement. It has been a long road to be able to accomplish just getting accepted into the program so I am really happy about that.</p>
<p>This chapter in my life is going to be full of challenges and sacrifices since I am leaving the kids behind for 2 years, however, I think the rewards are going to be huge in the near future.</p>
<p>Lucky for my the school is only 2 hours away from were my family lives so I will be able to visit them almost every weekend. Shew&#8230;</p>
<p>All day yesterday I was prepping my meals for the week. I don&#8217;t intend to gain weight or become unhealthy while in school so sticking to a tight schedule as far as meal planning an exercise routine is concerned is what I intend to do.</p>
<p>I believe it really doesn&#8217;t take much to have a meal plan in place. Just a bit of invested time at first to gather ingredients and recipes for the week ahead is pretty much it. Then devoting just an afternoon cooking for the week and you are done.</p>
<p>I think this method is better because it saves time doing food shopping and cooking through the week. All in all in a much better way and it saves time in the long run.</p>
<p>I was able to make chocolate almond butter overnight oats, caribbean rice and beans, gazpacho, pasta and the Acai superfood bites which will be my snack of the week. If this doesn&#8217;t last me I will prepare something simple like a wholesome salad a couple of times if any and I should be good to go.</p>
<p>Anyways, if you have noticed, these Acai superfood bites have no dates so for those that despise them this recipe is for you.</p>

<p>Place the hulled hemp seeds in a plate. Form balls with the paste and coat with the hulled hemp seeds.</p>

										<content:encoded><![CDATA[<p>I just finished making these coconut date bites last night in preparation for Easter dinner. I was so surprise as to how awesome they tasted and how easy they were to make that I will be making more of these bites for the upcoming week.</p>

<p>I am actually serving these coconut date bites as well as my <a href="https://www.eatgood4life.com/gluten-free-flourless-chocolate-cake/">gluten free flourless chocolate cake</a> for dessert today. I will be making two of them since there will be 9 of us and I anticipate people wanting seconds.</p>
<p>These also go perfect for the Moroccan food theme we are going for today. I really can&#8217;t wait.</p>
<p>I love making bites of this kind because not only you can make endless variations but because they are super easy to make, are gluten free, vegan and most importantly they are super healthy.</p>
<p>Coming May, I will be starting school again, so I really want to make bites like this every week so that I can pack them with me and have on the go. I know I will be getting hungry through out the day so I want to make sure I have it covered and not munch on anything I shouldn&#8217;t.</p>
<p>Nuts and things of this nature is what I like to snack on the most!</p>
<p>So how are you spending your Easter? I wish I had a chance of going to Spain and see family and friends, unfortunately plane tickets for a family of four to spend just a few days in Spain is not worth it. As a result, we will be spending it with some friends, which is equally important.</p>
<p>It is actually very hard these days to find quality friends. I don&#8217;t have that many for that matter. I have a couple of good friends from high school, however, they are in Spain and one good friend here with me in the USA.</p>
<p>I am one of those people that liked to have few good friends rather that tons of them that don&#8217;t have your back. It is a waste of time really!</p>
<p>Anyways, all in all, I hope that you have a wonderful Eater Sunday today. If you have 15 minutes and would like something sweet, healthy and tasty these coconut date bites are the perfect solution. A tasty dessert that your friends and family will enjoy!</p>
