Yesterday, I was able to make another salad. So far, every salad that I have made has been a winner but this bulgur bean salad with goji tahini dressing was just out of this world. I am just obsess with the dressing.

Lately, I have been wanting to incorporate more goji berries into my diet. After all, these are nutritional powerhouses. If you haven’t try them before this would be the perfect recipe to do so.

I got two huge tahini containers a couple of weeks back as well so mixing them both I thought would make a great base for any salad dressing.

I use sesame seeds on a regular basis but Tahini, well, yesterday was my first time using it and I was in love. This salad dressing is going to be one of my regular to go salad recipes. I am so obsess with it.

Do you have a salad dressing that you love? It is so easy to make your own salad dressings. This one take an extra minute or two but literally you can have the best tasting salad dressing in under 5 minutes.

If you are like me and love veggies, you will love this bulgur bean salad with goji tahini dressing. If you must have a gluten free version you can use quinoa instead and if you want a vegan version you can use maple syrup for the dressing.

As far as the legumes and veggies, you can really any of your choice. Salads are very versatile very versatile so anything goes really.

Enjoy!

I have been baking quite a bit lately given all the projects and recipes that I have had to do for the holidays but today I opted for making something no bake, these chocolate goji berry bars. They are the bomb!

I haven’t been using goji berries lately but that is about to change. I love using powerful superfoods. I do on a regular basis but sort of like I forgot about goji berries. Have you tried them before?

They are great almost on anything. I add them to smoothies, cookies, granola, cereal, yogurt and no bake bars and energy balls. The are packed with antioxidants, mineral, vitamins and are great for your immune system. If you haven’t started using goji berries I urge to get some. You will love them!

It will take you just about 10 minutes to make these chocolate goji berry bars. Since they are no bake they are easier and to put togther. Also, note that I used almond butter to make them but you can use any nut butter of your choice, even seed butter if you are allergic to nuts.

For the chocolate goji bars recipe you can visit my friends at nuts.com. You will be able to buy the goji berries as well as any nuts, flours, dried fruit, nut butter and anything you will need for your healthy cooking and baking.

Happy Holidays.

Enjoy!

I have been wanting to experiment with other flours for sometime now. I normally use oat, barley or whole wheat pastry flour for my baking recipes. Although I have bought almond flour in the past I have not used it until today and oh boy, what a pleasant surprise.
This cookies taste awesome. I would actually love to use almond flour much more but at $8.99 a pound I really don’t think I will :-)

Because I was experimenting I did not want to use so many Godgi berries in the recipe, next time I will double the amount. You can also use other type of nuts or dried fruit as well as white chocolate chips if you prefer.

If you don’t have almond flour you can use other type of flour but keep it at 2 cups instead of 2 1/2 cups and see how the dough feels. It should be some what moist and a little bit wet.

Anyhow, these are to die for so

Enjoy!!
