What can I say about this salsa. This roasted pepper salsa can be put together in a flash, it is just superb and it goes with chips, nachos, crackers, pita bread, you name it.

The only thing you need for this salsa is a food processor. Just place, all the ingredients in it a pulse for about 30 seconds.

I have made this roasted pepper salsa twice in a week and the second time around I actually doubled the batch it is that good.

I made this salsa, for the first time, for a get together at my friends house. Everyone was raving about it and of course I gave the recipe out. That one time I made it with parsley but this time I actually used cilantro.

You can use either. Both where really good.

On another note, my posts have been on the slow side, because with  the new website lounging in about a week, there is still a lot to do. So if you are wondering, this is why.

Facebook, once again, is giving me some trouble. It is so frustrating because there is no one that can help you but to just search online for solutions. Oh well…

I hope you get to try this roasted pepper salsa. Is nothing but simple and delicious. One of the best salsas I have ever made.


Just place all the ingredients in the food processor and pulse for 20-30 seconds. You are done!

Yield: 4 servings


12 oz jar roasted peppers
2-3 jalapeno peppers, some seeds removed
2 garlic cloves
3 cups fresh cilantro leaves, washed
1/3 cup extra virgin olive oil
pinch of celtic salt



Place all the ingredients in your food processor and pulse until all the ingredients have combined. About 20-30 seconds.

Store in an air tight container for up to 1 week.

  1. Wow. It looks like you’re having a great time! I’ve always wanted to travel to España, but I will one day. The view of the hiking looks gorgeous. I’ll be sure to check it out whenever I go visit Spain (probably in 5 years? lol). I’m usually scared of heights, so, I’ll see how that goes! Maybe my excitement will overcome my fears.

    • You will love this area. If you come to Spain you have to try your best to make it to the North. Gazpacho is very easy to make and extremely healthy so I suggest you try it soon, when I get back to the US I am going to make it at least once a week. Thanks.   4. Ahhhhhkkk!!!! This post just makes me hurt for spain so much!!!! I fell in LOVE with barcelona and have been desperatly trying to get a job there- stupid work visa seems to be the biggest problem. Anyways, as a vegetarian i enjoyed a lot of gazpacho there :)
    Do you have a recipe for the less traditional white gazpacho with almonds?I only had it once but would love to recreate it this summer.

  9. Hey Myriam are you from Spain? Is the northern part of Spain the most beautiful part of the country? I am planning to go with my girlfriend she’s French but I told her I always wanted to visit Spain as well, maybe this summer.

    • I think it is very beautiful, however, there are many beautiful parts of Spain. South Spain, La costa Brava, which is the East side of Spain, Madrid etc is very beautiful. Topography is very different depending where you are in Spain. Up north looks like you are in Sweden, South like you are in Greece, East like you are in Italy…so different. I hope this helps a little.
