This bacon wrapped chicken is for sure sensational. I have never made any type of wrapped chicken before and for sure this time is not going to be the last. Next time around though, I will add tons more cheese. I don’t think I can get enough cheese, I just love cheese dearly!

It was great that I was able to have some left overs with this recipe, as all of my family enjoyed it a lot. I intended to make extra, as this recipe is a little bit more elaborate than other recipe I normally cook. You can pair this bacon wrapped stuffed chicken with any veggies of your choice. I did with a mixed green salad.

For this recipe I also used organic chicken as well as natural bacon. Organic poultry and meat are a regular food staple in my house. To avoid any GMO’s, hormones or antibiotics in food, this is what we do. Purchase such items.

It has been a pleasure working with Tabasco, as I stated before, I love their products. Me and my husband are avid spicy food eaters, and what I like the most is that most of their products contain just real ingredients. An extremely important concept in my opinion.

Add the tomatoes, a couple of teaspoon of Tabasco® original sauce, and sharp cheddar cheese on each chicken breast and roll them up. Wrap each with 2 slices of bacon. This process will be a bit messy but don’t worry the stuffed chicken will come out fine.

Place the bacon wrapped stuffed chicken in a large baking dish and bake on the pre-heated oven for about 30-35 minutes. If you feel that the chicken is getting watery, which mine did, at about half the baking time remove the chicken from the tray and place a wire rack on it. Place the chicken on top of the wire rack so that the juices flow to the bottom of the baking tray to make sure the chicken cooks through and the bacon gets sort of crispy.

Bacon wrapped stuffed chicken

Miryam's original recipe

Yield: 4-5 servings

Total Time: 45 minutes

Ingredients:

  • 2 lbs organic chicken breast pounded thin, about 8-10 fillets
  • 2 tbsp Tabasco® original sauce, divided
  • 1 14oz canned chopped tomatoes, you can also use fresh
  • 1 cup shredded sharp cheddar cheese, divided
  • 10 oz  slices uncured bacon

Directions:

Preheat your oven to 375F.

Lay the chicken flat on chopping board, and place about 1-2 tablespoons of tomatoes followed by 1-2 tablespoons of the cheddar cheese and Tabasco® original sauce.

Roll the chicken breast up and wrapped them with two slices of bacon. Repeat with all of the chicken breast. Place the rolled up chicken on a roasting pan and bake for 30-35 minutes or until the cooked.

Note: If you feel that the chicken is getting watery, which mine did, at about half the baking time remove the chicken from the tray and place a wire rack in the roasting pant. Place the chicken on top of the wire rack so that the juices flow to the bottom of the roasting pan to make sure the chicken cooks through and the bacon gets sort of crispy. This roasting pan came with a tray, which is the one I used.
