Baileys mini loafs

Finally……here it is……the Baileys flavored mini loafs I have been talking about for quite some time now.

These are not only good, they are super good. Baileys, or Irish cream, which is practically the same, is one of my favorite drinks. In case you didn’t know already, I have a super sweet tooth, so this drink is right up my alley :-)

In this version I used raw cacao nibs because, extrange enough, because I always have pounds and pounds of walnuts at my house, I run out of them. It was good with the cacao nibs but I am most certain that with the walnuts it will be even better!!

Anyhow, I wanted to let you know that my posting is going to decrease just a little tad. Summer is right around the corner, the kids won’t have school anymore, we will be going away for about a month and I just started writing an Ibook. I am anticipating that this project is going to take me at least a few months. I want to incorporate recipes from the blog, but I also want to include quite a few new recipes that I have been developing through out some time now.

I would appreciated if anyone has any suggestions on what they would like to see in the ibook. So far I am pretty much concentrating its content on healthier eating. Recipes that are tweak here and there so that everything and anything can be eaten without feeling any deprivation. That is, increasing the quality of ingredients by using less sugar, bad fats and salt. Incorporating as many super foods as possible, organic items, whole grains, lean meats and poultry etc. Just pretty much cooking and baking with REAL FOOD which is what our bodies are intended to eat!!

I don’t know if I will keep the nutrition facts, if I will add any health notes on the advantages of specific ingredients etc Everything is pretty much up in the air so stay tuned!

On the left picture you can see the mixture of wet ingredients. On the right picture is how the batter turned out after adding all of the ingredients together.

Before and after baking pictures!! I used a mini loaf baking pan but you can use a regular size one and fill it up 3/4 of the way. You may have enough batter for two loafs, I am not sure!!

These are adorable. Half of the baked batch went on the freezer for future consumption as these freeze rather well :-)

Instead of using cacao nibs I will be using chopped walnuts next time. I think it will be better!! By the way these are not that sweet but if you still want to decrease the sugar content you can.

Baileys mini loafs

Yield: 8 mini loafs

Ingredients:

4 eggs
3/4 cup unrefined sugar
3/4 cup olive oil
1/4 soy milk, regular milk and almond milk will also work
3/4 cup Baileys
1 cup barley flour
1 1/3 cup whole wheat pastry flour, you can use 2 1/3 cups WWPF if you don't have barley flour
1 tablespoon baking powder
2 tablespoons raw cacao nibs, 2 tablespoons chopped walnuts can be used in place of this

Preheat oven to 350 F. Grease and flour loaf pan. I used a mini loaf pan but you can use a large one.

In a bowl mix eggs, oil, baileys, milk and sugar. Add flours, baking powder and cacao nibs and incorporate well.

Place mixture on the prepared pan and fill 3/4 of the way and bake for 25-30 minutes or until a tester comes out clean (If using a large baking loaf pan you will need at least 40 minutes of baking time)

Remove from the oven and cool on the pan for about 15-20 minutes before removing from the pan.

Nutrition facts calculated based on the recipe giving 8 mini loafs. Each half of a mini loaf = 1 serving. 

The Baileys was not included on the calculations as I could not added together in the recipe however you can add an extra 35 calories, 1 gr of carbohydrate and .5 g of fat for each serving size.
