Apple almond cake

 I love making cakes and incorporating fruit to them is something that I like to do when ever I can. In this case, this apple almond cake works fabulously. The apples made the cake very moist and gave it a unique taste.

I have just made this apple almond cake after not being able to bake for over a week. It was the longest week ever. Not only because I have a super sweet tooth but because I really wanted to get into the kitchen and bake something.

I wasn’t able to stand for long, due to my surgery not long ago, so I had to do something that did not require more than 10 or 15 minutes standing up. This cake was the answer!!

I used my old recipe for coconut and lime cake and I just made minor alterations to make an almond and apple version.

My friends often ask me how come I have all of this time to bake, I always tell them that most of the times I bake I do things that don’t require too much time. This cake is an example.

Sometimes I might spend a little bit more time baking more elaborate things, like breads and sugar cookies, but for the most part my baking time is not too exceptional. Also, when it comes to blogging I really don’t elaborate to much on taking pictures due to time constraints, I wish I could, maybe in the future.

Apple and almond cake

Yield: 8 servings

Total Time:1 hour 10 minutes

Directions:

Preheat oven to 350F. Grease and flour a 9-inch round cake pan.

In a mixing bowl, I use a wire whisk to do this, combine eggs, milk, sugar, and oil. Add flour, baking soda and baking powder.

Pour the batter into the prepared pan and sprinkle the grated apple and almonds over the cake.

Bake until golden, 40-50 minutes or until a tester inserted into the center comes out clean. Cool for 20-30 minutes, then turn onto a cooling rack and cool completely.
