					<description><![CDATA[Hi Patti, Manchego cheese is an aged cheese like parmesan or asiago cheese can be. It has a salty flavor. You can use any firm cheese of your choice for this recipe, I would suggest Pecorino romano (fanky flavor though), Monterey Jack is fine, really any firm cheese. &lt;br /&gt;On your other question, I have actually never made my own pasta. Thought about getting a pasta machine once but never did, sort of thought it would be too much work since we eat lots of it :-) Maybe in the future...]]></description>
