This whole wheat Caramelized onion bacon pizza has become my son’s favorite.

I am not a big meat eater but once in a while I prepare meat and chicken recipes for my family since they really do enjoy them. I recently purchased some nitrate free bacon so I decided to use it on pizza. It was my first time adding bacon to it and to be honest, it was quite good, especially with the caramelized onions.

The bacon I used was Canadian bacon, which was nitrate free. I am sure you can find other varieties which don’t have unwanted chemicals. I bought mine at Costco but I have been told that not all Costco chains carry the same items so I am not sure if yours will.

For the pizza crust you can use your preferred pizza crust. If you want to make your own crust you can use this homemade whole wheat pizza crust recipe. You can buy store bought, like I did, or just use what ever you like.

I also use pizza stones for baking my pizzas. Ever since I bought mine I have never turned back. I love how my pizza stones make the pizza dough nice and crunchy and not soggy. They are heavy but so good for baking the pizzas!

On another note, I have just gotten done with the manuscript of my cookbook. It will be coming out September 2015. I am super excited for you guys to get your hands on it. I have worked really hard so I hope you like it. If you want to get a sneak peek of some of the recipes you can go here.

For the grand finale, I introduce to you recipe number five of the Tabasco 10 ingredient challenge, bacon wrapped chicken. It has certainly been a challenge but a good challenge nonetheless. Here is a list of the other bloggers involved in this challenge.

This bacon wrapped chicken is for sure sensational. I have never made any type of wrapped chicken before and for sure this time is not going to be the last. Next time around though, I will add tons more cheese. I don’t think I can get enough cheese, I just love cheese dearly!

It was great that I was able to have some left overs with this recipe, as all of my family enjoyed it a lot. I intended to make extra, as this recipe is a little bit more elaborate than other recipe I normally cook. You can pair this bacon wrapped stuffed chicken with any veggies of your choice. I did with a mixed green salad.

For this recipe I also used organic chicken as well as natural bacon. Organic poultry and meat are a regular food staple in my house. To avoid any GMO’s, hormones or antibiotics in food, this is what we do. Purchase such items.

It has been a pleasure working with Tabasco, as I stated before, I love their products. Me and my husband are avid spicy food eaters, and what I like the most is that most of their products contain just real ingredients. An extremely important concept in my opinion.

Let me know if you get to try this recipe. You will wow your friends and family with this. I think it looks fancy. Not something that you will serve regularly as a dinner option!

Enjoy!

Add the tomatoes, a couple of teaspoon of Tabasco® original sauce, and sharp cheddar cheese on each chicken breast and roll them up. Wrap each with 2 slices of bacon. This process will be a bit messy but don’t worry the stuffed chicken will come out fine.

Place the bacon wrapped stuffed chicken in a large baking dish and bake on the pre-heated oven for about 30-35 minutes. If you feel that the chicken is getting watery, which mine did, at about half the baking time remove the chicken from the tray and place a wire rack on it. Place the chicken on top of the wire rack so that the juices flow to the bottom of the baking tray to make sure the chicken cooks through and the bacon gets sort of crispy.

I just finished making these Mini Vegetable and Bacon Fritatas for lunch. They were superb. I pair them up with some corn bread, which I have never made before. I will post the corn bread recipe sometime this week!

These Mini Vegetable and Bacon Fritatas is a versatile recipe, as you can add any veggies you may prefer, add or replace other ingredients to satisfy your own individual flavor. You can also make a big fritata rather than small ones, much faster, which I did a while back. Here is the link for the other Vegetable Fritatta

These Mini Vegetable and Bacon Fritatas are perfect as an appetizer for any party you may think of having in the future, as a quick lunch fix or whatever you may want! You can keep them vegetarian by skipping the bacon. You can add any other veggies of your choice. The sky is the limit so I hope you get creative with them.

Enjoy!

Pasta alla matriciana is a very classic Italian dish. It is very easy and simple to put together. Healthy too.

If you want simple, fast, easy and delicious pasta, this pasta alla matriciana is it, you have come to the right place. You will get this done in no time. This recipe is a classic recipe in Italy. The white wine, which is widely used not only in Italy but in Spanish cooking, gives this sauce a very unique tasty flavor.

The bacon, Canadian bacon in this case, also gave a distinctive flavor to the sauce. I was only able to use this type of bacon since the other brands contained sodium nitrate, which is a carcinogen that I do not appreciate using in my cooking. The least amount of nonsense chemicals the better! If you can find pancetta without it even better.

Anyhow, I hope you try this recipe because it is ridiculously simple and delicious. This one is for sure a keeper.

Enjoy!

On the left picture you can appreciate the onion and bacon already cooked through before adding the wine. The right picture is the final result for the sauce, after it has reduced a bit.
