<p>Summer is almost over and during these few months I have been thrill to experiment with multiple flavors to make frozen popsicles. Today I was able to make these coffee chocolate popsicles. To be honest, I don&#8217;t know what I waited all these time to make such combination. It was delish!</p>

<p>I haven&#8217;t made any coffee flavor popsicles before and to be honest I have no idea why I didn&#8217;t up until today. I love coffee flavor anything so I am glad I was able to come up with this combination today.</p>
<p>It is one of the simplest coffee chocolate popsicles you will ever make. You can keep them just plain or get creative like I did and make them more appealing. Either way they are great, however, I think adding the melted chocolate and chopped almonds makes these coffee chocolate popsicles over the edge.</p>
<p>My husband that loves coffee was over the moon when he found out I was making these.</p>
<p>To make them, all you need is your favorite brewed coffee and the addition of the new <a href="https://tracking.tapinfluence.com/trk/uvB0r/CTvCa/c?p=afqDn&amp;i=rBe2o&amp;r=lA1BYd1QZH8%2BUHZXqR9dWu8w%2BFQrD7F%2Fd4uHdxcDZoM%3D" target="_blank" rel="nofollow noopener">Silk Almond creamer</a>. You don&#8217;t even need to add any sugar or any other ingredients to these popsicles but if you like a more fancy variation go ahead and add the melted chocolate and chopped nuts.</p>
<p>Silk has also come up with other flavors that are available for a limited time. Try the Pumpkin flavored almond creamer! It is delicious, creamy, and pumpkiny!</p>
<p>These coffee chocolate popsicles make for a great treat. I always have two at a time since they are so good. Next time I make them I will for sure double the batch. They are simply plain sensational.</p>

<p>Before you consume popsicles dip each popsicle on melted chocolate and sprinkled chopped nuts over the chocolate.</p>

I actually could have used just raw almonds straight on the food processor but I wanted to get more creative and make this maple roasted almond butter. It was just plain sensational.</p>

<p>There is not much as far as instructions is concerned when it comes to making your own nut butters. I have only made it with peanuts before but you can even use seeds if you like. Sunflower butter is another popular recipe so if you are allergic to nuts use seeds instead.</p>
<p>Also, depending on your food processor the nut butter make take a bit longer. Normally about 8-12 minutes. I have a very powerful food processor so mine was done in 8 minutes sharp.</p>
<p>I also like my nut butter on the chunky side but the more you let it be in the food processor the smoother it will get. Also, I only added 3 tbs of maple syrup when I roasted the almond but later, once the almond are in the food processor you can add more maple syrup if you like. I did!</p>
<p>Making your own nut butters is extremely easy. Again, if you would like to skip roasting the almond and skip that step all together just pulse the raw almonds.</p>

<p>In case you haven&#8217;t notice by now, I have a very sweet tooth. Because of that, I must have some sort of sweet treat each day. Luckily for me, because I like baking, I am able to make my own goodies.  These are always healthier than if I were to buy them store bought.</p>
<p>Many of them turn out to be no bake, and since I am lately press for time these superfood chocolate truffles were just perfect.</p>
<p>I was able to add some flaxseed meal to them. I love using flaxseed meal on no bake desserts as well as in smoothies. It is rich in Omega 3&#8217;s, which is a natural anti-inflammatory as well as being very rich in soluble fiber.</p>
<p>If you suffer from high cholesterol know that soluble fiber will lower your cholesterol naturally. Cholesterol recycles in the body but by consuming soluble fiber, this attaches to cholesterol and gets excreted from the body later on. So there&#8230;.a natural alternative to lowering cholesterol.</p>
<p>If you like to use any other nuts besides raw almonds you could do so. Any type will work.</p>

<p>I wish I doubled the batch when making these superfood chocolate truffles. They will last for a while in your fridge so whenever you have a sweet craving these are perfect. I have also packed them up on my kids lunch boxes. The love treats like these so whenever I get to make some half the batch is for them.</p>
<p>Next month I start school so I know I will be making plenty of superfood bites. They are just the perfect pick me up.</p>

<div class="instructions" itemprop="recipeInstructions"><p>Place all the ingredients, except chocolate and coconut oil, in your <a href="http://amzn.to/1SSDdym">food processor</a> and pulse until it comes together. Shape dough into desired individual shapes. I choose to do a few balls and a few squares using a <a href="http://amzn.to/1SSDaCP">square silicone mold</a>.</p>
<p>Melt chocolate and coconut oil in a microwave safe bowl at 30 seconds intervals until completely melted. Dip each truffle into the melted chocolate and place on a baking sheet previous lined with parchment paper. You can sprinkle any toppings on each truffle if you like. I used some cacao nibs and hulled hemp seeds.</p>
<p>Place truffles in the freezer for 10 minutes until the chocolate sets. Store in an airtight container in the fridge for up to two weeks.</p>

										<content:encoded><![CDATA[<p>I have been looking to make a new version of oatmeal lately so I came up with this blueberry almond oatmeal since I had a lot of frozen blueberries available. I always keep frozen organic fruit in my freezer for smoothies and things of this nature. Frozen fruit comes in really handy sometimes!</p>

<p>Frozen fruit is great to have in stock. I always make sure I have plenty of it so I can use for frozen popsicles, smoothies and oatmeal. For this blueberry almond oatmeal you can use any other fruit of your choice, however, blueberries work rather well. I really loved the combo of the blueberries and almonds.</p>
<p>For the milk of choice I used <a href="https://tracking.tapinfluence.com/trk/dId9R/iCe2E/c?p=fYD0Z&amp;i=rBe2o&amp;r=lA1BYd1QZH%2Bc2bNAbRFBAK083rDl2QbXtvXm91XNavtT7XIKBiN3pWVUMRQ2kwJ4GBwDz47thwUhttSFfRf%2Ffw%3D%3D" rel="nofollow">Silk Unsweetened Almond Milk</a> but any unsweetened variety would work. This way you can control the amount of sugar that goes in your blueberry almond oatmeal.</p>

<p>While I made quite a bit of this blueberry almond oatmeal you can half the amount if you like. I tend to make quite a bit of it because we are a family of four and we have it every day of the week, thus this amount will only last us about 4-5 days.</p>
<p>I also tend to take it as a snack in ball jars. It is very convenient as this works for breakfast or for a snack.</p>
<p>Well I hope you get to make this recipe. You can use regular oats for a quicker version but I wanted to use quick rolled oats this time for a different texture.</p>

Once the oats are cooked, fold in the blueberries and almonds with a <a href="http://www.amazon.com/s/ref=as_li_ss_tl?_encoding=UTF8&amp;camp=1789&amp;creative=390957&amp;field-keywords=spatula&amp;linkCode=ur2&amp;tag=eago4li0c-20&amp;url=search-alias%3Daps&amp;linkId=RKZTKNSMTT2EC3TV">spatula</a> and serve.</p>
<p>You can keep the mixture covered in the refrigerator for up to 5 days.</p>

<p>Brussels sprouts are currently in season so if you like this vegetable I suggest you take advantage of it. It is great for many things. You can prepare it in a multitude of ways. For the most part I have added it to rice dishes, however, today I just pair them with caramelized onions and they were the bomb.</p>
<p>I have seen them prepared with bacon, which I am sure it is really good, however, I don&#8217;t like bacon that much so I figured caramelized onions will give the brussels sprouts the flavor they deserve.</p>
<p>All in all the prep time for this Brussels sprouts with caramelized onions is just about 5 minutes. It is rather a quick and simple recipe that you can make to pair it with your main protein over the holidays.</p>

<p>Because I love lemons I have been planing on making some more lemon desserts. I have thought of lemon thumbprint cookies as well as lemon popsicles, maybe even a lemon gluten free mug cake. Do you have any suggestions?</p>
