Raw vegan raspberry cheesecake

Raw vegan Vanilla raspberry cheesecake

miryam's original recipe

Yield: 10 servings

Total Time: 30 minutes

Ingredients:

Cheesecake layer

Top Layer

Directions:

Soak the cashews in water for 1 hour. Discard the water and line a loaf baking pan with unbleached parchment paper and set aside. In a medium mixing bowl, mix the topping ingredients and let it sit for 1 hour until it thickens.

Place the crust ingredients in your food processor and pulse until the mixture comes together; this should take about 1 minute.

Press this mixture evenly onto the bottom of the prepared loaf baking pan and place it in the freezer while you prepare the cheesecake topping.

Place the cheesecake ingredients in your food processor and pulse until smooth. Pour the cheesecake mixture over the crust in the baking pan and spread it evenly. Freeze the dessert for at least 1 hour. Spread topping ingredients evenly over the cheesecake layer. Freeze for another hour.

Cut the cheesecake into squares before serving. Keep leftovers covered in the freezer for up to 3 months.

  8. Hi, can’t wait to try this, but why do I feel like something is missing from the recipe for the cheesecake layer? Do you get the white layer just from cashews mixed with vanilla and maple syrup? Thanks.

  9. My cheese layer didn’t turn out as white and creamy looking as yours. I soaked the cashews but it was very hard in my ninja blender to get them to mis. Any suggestions?

    This looks amazing. Being in Canada we do not have the same options for groceries as the USA. I looked up the cascading cereal on Amazon in Canada site and the prices are ridiculous. 140 for 10 boxes. Someone else selling for 40 for one box. My question is what could I use instead of this in the crust?

  14. I get frustrated when I see a “raw” recipe and then I read the ingredients and it has things like cereal in it :/

  15. Still, it should not be labeled as a raw recipe. If you are going to use oats it is still not raw! Rolled oats and steel cut oats are cooked while processed. You need to make sure to use raw oat groats if is going to be a truly raw recipe. I don’t mean to be negative but I just want people to informed about raw vs. almost raw or non raw food and it seems like they are being misguided by recipes such as these.

  17. Do you think it would be possible to add an extra layer of say, vegan whipped topping?- before the final freeze? My husband isn’t crazy about the fruit part (or fruit in general!)and I don’t want it to be overwhelming for him! Thanks. :)
