Superfood energy bites

Holy smokes, I can’t say enough good things about these superfood energy bites, they are just plain sensational. I wish I had doubled the batch when I made them but unfortunately I didn’t. Next time I make them, for sure I will. They are to die for!

These superfood energy bites were great for my kids lunch boxes as well as for me to grab and eat on the go. Sometimes I don’t have much time to whip up a smoothie or eat anything else so I make sure that at least once a week I get to make things of this nature so when the time comes and I have to run out the door I have something healthy to snack on.

What I like about these superfood energy bites is that not only they are super easy to make but that you can use other ingredients and make them with nuts and dried fruits of your choice.

I happen to buy some golden berries the other day that were on sale so I put them to use. I don’t buy golden berries as much as I would want to because they are a bit pricy but whenever they come on sale I take advantage and buy a few packages.

I have seen many energy bites recipes using added sweeteners like honey and maple syrup but to be honest I couldn’t possibly do that because using dried fruits and medjol dates makes energy bites sweet enough. Using honey and maple syrup would be way to sweet for my liking.

When I start P.A school back in May I will be making things of this nature 24/7. Well, I know I am not going to have much time since I will have to study a lot but at least one day a week I will devote part of it to cooking and baking to make food for the week ahead. We all know how nasty cafeteria food can be.

This is by far my favorite recipe for energy bites. These bites are superfood because of the golden berries that are full of fiber, B-vitamins, protein and show many digestive, anti-inflammatory, and antioxidant benefits. They also have chia seeds which are also considered a superfood.

These superfood energy bites will also lower your cholesterol naturally since I added flaxseed meal which is rich in soluble fiber. Soluble fiber works magically to excrete excess cholesterol from the body.

Superfood energy bites

Miryam's original recipe

Yield: 27-30 bites

Total Time: 20 minutes

Ingredients:

Directions:

Add the dates, golden berries, flax, water and chia seeds to your food processor. Pulse until the mixture comes together. It will be wet.

Add the oats, cranberries, pistachios and pulse just enough so that it gets mixed in with the previous mixture just like in the picture. You don't want this mixture to be to puree like. You want to see the chunks of pistachios and cranberries.

Transfer the mixture to a mixing bowl and with your hands form little balls.

You can keep these refrigerated in a covered glass container for up to 1 week.
