Dark chocolate brown rice crispy treats

So here they are, the simple dark chocolate brown rice crispy treats that I used for the bottom layer of the peanut butter and dark chocolate squares I made a week ago or so. I figured I just make the bottom crispy part by itself and call it a day….well actually more like I wanted to try it by itself anyhow.

They were really good but in my opinion I rather have the extra coconut and peanut butter layer in between with the extra dark chocolate chips on top, just saying :-)

I actually though these, by themselves, were a little bit on the sweet side so I made them a second time and decrease the sugar from 1/4 cup to 3 tablespoons, a little bit better!!

Crispy treats are a very popular thing with kids. I don’t have to say it twice, when I am offering crispy treats to the kids at my house, they both run at once :-)

Enjoy!!

Here you can see the rice crispy being mixed in with all of the ingredients in the pan and then I just lined them in a 8×8 square baking pan previously lined with foil paper.

These are super simple to put together. Next time I will decrease the honey content and make them less sweet because I thought they were on the sweet side. I think with a little bit less they will be even better. Who needs all that sugar right?

Dark chocolate brown rice crispy treats

Yield: 14-18 pieces

Ingredients:

3 tablespoons unrefined sugar
1/2 cup honey
1/2 cup peanut butter
2 1/4 cups brown rice cereal
1/4 cup flax seed meal
1/2 cup oats
1 tablespoon dark cocoa powder

Directions:

In a sauce pan, at low heat, combine sugar, honey and peanut butter. Heat for about 1-2 minutes stirring to dissolve sugar. Remove from heat and add cereal, oats, dark cocoa powder and flax seed meal. Press into a square baking pan lined with foil like in the picture.

Let cool to set. I normally put it in the fridge for 20-30 minutes. Lift out of the pan, remove foil and cut into small bars or squares. Store in the refrigerator.

  1. I guess I can say that I’ve already tasted these and loved them. But I’m with you, I prefer them with the peanut butter / coconut layer and more chocolate! :)

    And an A-? That’s awesome!

  2. Miryam,
These look so good! And I love the fact that they’re made with healthier ingredients. You’re setting a great example for those of us who tend to do pretty traditional baking of sweets!

  3. Yummy :) I really wish I could find brown rice crispies that weren’t so expensive here :( When I do – watch out! I’ll be totally making these :D

  4. another healthy one.. deliciousness! that’s 2 recipes I should make this week. :)

  5. I just ate a giant rice krispy treat from Noodles and I should have been having this much healthier version. Love it!
