I am in love with this Creamy mushroom and spinach pasta. I am really big on pasta dishes as they are super easy and versatile. This Creamy mushroom and spinach pasta does not disappoint.

OK my friends, so to break things up I figured I post this Creamy mushroom and spinach pasta  recipe. I have been cravings sweets ever since I got back from Spain, so I have been thinking nothing but cookies, cakes, cupcakes and such. I have been doing a few popsicle recipes to break things up as well but I can’t stop thinking about sweets.

What an incredible sweet tooth I have, thank goodness I have good genetics….well it is not all genetics because I do work out on a regular basis and cook healthy always from scratch however my genetics sure does helps :-)

For this recipe I used a specific brand for the creamy mushroom sauce but you can use any other of your choice. I just like the pacific foods brand because many of their products are organic and use natural ingredients, which is what I am all about. If you like you can learn more about their products here.

A lot of people shy away from pasta but not me. As long as you are eating the whole grain counterparts you should be OK. In actuality carbs should make the bulk of your diet and if not at least 50% percent of total calories should be coming from them.

On another note, I have been missing Spain quite a bit. It is unfortunate that I get to go only once every two years but it is just too much money to spend when there are four planes tickets to buy. I wish I could go every year because my kids love spending time with their cousins and traveling around seeing special places. Anyone care to donate some money for my Spain travels? Just kidding :-)

Talking about especial places, I figured I post a few pictures of our trip so that you can see how beautiful Spain is. Have any of you been there before?

I don’t say this because I am from Spain, but it is truly a beautiful country. The topography is so diverse, as well as the culture and architecture. There is tons of history and plenty of things to do. The beaches are out of this world and the food, well, just insane :-)

Anyhow, I hope you like the recipe as well as the pictures.

On the left picture you can see the sauce with the spinach right before adding the pasta. You can also add pepper flakes for some heat. We love heat so I added some on my plate.

This was one of my favorite places I visited in Spain. It is Ronda, Malaga which is South of Spain and really really hot :-)

These are my kids. They did great considering we went all over the place in the heat. We managed somehow but it was hard for them. We just had plenty of water and sun screen :-)

This castle in Almodovar del Castillo, Cordoba was the bomb. When we visited we were pretty much the only people there because it was so hot. Oh well, we enjoyed ourselves there for sure!

This is just one of the many beaches we visited. This one is in Liencres, Cantabria, which is North Spain. A bit colder than in the south of Spain but still amazing.

The landscape and topography in Spain is very different from the North and South Spain. The south is dried and hot and the north is very green and cool.

This was our favorite beach in the entire trip. It was in Liencres, Cantabria. It was just paradise.

This was in Asturias. The Cares Hiking Route. It was simply breath taking. It took us about 8 hours to hike but it was worth every minute of it.

The cliffs were scary and overwhelming but after a while you got used to them. Just too beautiful. I hope you enjoyed the pictures :-) I will post a few more on my other posts to come.

Creamy mushroom and spinach pasta

Creamy mushroom and spinach pasta

Miryam's original recipe

Yield: 4-5 servings

Total Time: 20 minutes max!

Ingredients:

  • 1 lb whole wheat penne pasta
  • 16 oz fresh mushrooms, sliced
  • 3 garlic cloves, chopped
  • 1/2 cup Parmesan cheese
  • 12 oz container cream of mushroom
  • 6 oz fresh spinach
  • Fresh Parley, basil works good too
  • 2 Tbsp olive oil
  • Celtic Salt and pepper to taste

Directions:

Cook pasta according to package instructions.

While the pasta is cooking, in a large saute pan, over medium to high heat, heat the olive oil. Add the mushrooms and cook until almost soft, 3-5 minutes. Add the garlic and cook further for another minute or so.

Add cream of mushroom, Parmesan cheese and stir for a couple of minutes until warm. Turn heat off and add the spinach and combine. The spinach will wilt as you stir the sauce around it.

Add salt and pepper to taste and stir in the pasta and any fresh herbs of your choice. Serve while still warm. I also used some pepper flakes.

Note: If you like your sauce a bit more runny you can add some pasta water to the sauce. I like it really thick and creamy so I didn't.

    I love the photos!! They show how different are south and north, is true, and both are nice!! But, you know, I’ve never been in Andalucía!!!!

  7. I went abroad to Spain for two weeks in high school and I loved it! It was brief but we went to Madrid, Segovia, Granada, Cordoba and Toledo. Loved the food. Wish I could go back!

  10. I used regular pasta instead of whole wheat pasta.

    • The only thing I could think of is that the pasta is what made it starchy. Try another brand next time. Using another type of pasta is fine but white pasta tends to be more starchy that whole grain though. Whole grain is more dried. Thanks for stopping by.

    • You can make your own cream sauce I think. Perhaps use some heavy cream mixed with Parmesan cheese and salt. 1 cup heavy cream, 1/4 cup or 1/3 cup parmesan cheese, 1 tsp arrowroot powder or cornstarch and 1/4 tsp of salt. I hope this helps!
