Cranberry and oatmeal breakfast muffins

These cranberry and oatmeal breakfast muffins have become one of my favorite muffin recipes. They are so easy to make, healthy and delicious. You can also have them on the go or freeze to consume them later on. So good!

 I have been sick for a few days with the flu so that meant no gym, no baking and no cooking…..but today that I have been feeling a bit better so I felt like making this banana and oatmeal muffins. I made these muffins a while back, when I first started the blog, although today I felt like making them slightly different so I made a few changes to the original recipe and make these cranberry and oatmeal breakfast muffins.

Since it is cranberry season I added fresh cranberries to the batter rather than the apples and dried cranberries. What a success. My husband loves them and my kids are eating them by the minute, thank goodness they are pretty healthy……. I don’t think they will last more than one day :-)

You can make these cranberry and oatmeal breakfast muffins with which ever fruit you prefer. They are very versatile, which is one of the things I like the most, plus they also take no time to put together, MAX 10-15 minutes total…..no joke!

You can use any fruit you like in these muffins. They are very versatile :-)

Cranberry and oatmeal muffins

These are a fabulous alternative for breakfast on the go, they are pretty healthy. Good on soluble fiber to low in cholesterol :-) My husband takes 3-4 each morning.

Cranberry and oatmeal breakfast muffins

Miraym's original recipe

Yield: 16-18 muffins

Total Time: 40 minutes

Ingredients:

Directions:

Preheat oven to 350F degrees. Line muffin pan with muffin paper cups.

In a bowl, with a wire whisk, combine bananas, milk, oil, sugar and egg. Add dry ingredients, flour, oats, cinnamon and baking powder and whisk until well incorporated. Fold in cranberries and walnuts.

With a medium cookie scoop, fill each muffin cup 3/4 of the way. Bake for 25-30 minutes or until tester comes out clean.

Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

  1. I was looking for something to make for breakfast and got your email this morning with the cranberry oatmeal muffin recipe. Made these up in about 5 minutes and baked them in a mini-muffin tray. I made two substitutions, flax meal+warm water for the egg and rice milk for the regular milk. I also cut the sugar down to 1/2 cup. I’m not vegan, but I like to substitute for eggs and dairy when I bake if I don’t think it will make a difference. These were delicious! I’ve already eaten 4, thank goodness they are mini size! Thanks for sharing this wonderful recipe, I will definitely make them again.

    I am happy they turned out great for you. I have made them twice this week so far on regular size and a jumbo muffin pans. The flax seed meal is a great combo, healthier and more soluble fiber :-)

    these muffins were a huge hit with my mum and mom-in-law! i substituted almonds for walnuts. added coconut based flax meal and used soy milk. really yummy. have made them twice now in the space of three day. my husband also loved them. and have now distributed this recipe around my friends in the UK!

  10. I just made a batch of these so the kids and I can have a quick breakfast before our zoo trip tomorrow. So yummy, and filling!!! I made a couple of changes, I added grated zucchini (fresh from my garden) and a dash of ground cloves. The muffins themselves were heavy but the texture was actually really fluffy. This is definitely a recipe to keep! Thanks :)

  15. I LOVE LOVE LOVE all of your recipes. I want to make these for my brunch today, but have no milk (cow, coconut, soy, rice) in the house, any suggestion on substitutions? I would love to make these with blueberries for my son. He loves blueberry muffins and is trying to eat clean :) ~ Happy Holidays to you! :)

    • You can use any milk of your choice. IT should work just fine. I think blueberries will be fine too, just make sure they are fresh and not frozen. I don’t know if the frozen ones will work good here. Thanks so much for visiting my blog :-) Happy holidays to you too :-)

  18. In this recipe it calls for only a 1/3 c. sugar as to where the other one calls for 3/4 c. I was just curious. I’m going to.use applesauce in place of the oil and most likely maple syrup. I’ll let you know how they come out!

  20. You may have answered this already and I apologize if I missed it (I’m very tired!) but how long do these usually keep? I imagine not long left out on the counter but perhaps a week refrigerated?

    • You could even freeze these if you like and have them as you go. In the fridge I believe they will last longer than in the counter. We have them last for about 3-4 days bc they just simply get eaten :-)

  23. Curious if the oats are 1 and 3/4 cup or does that mean A (as in one) 3/4 c? Super confused and it seems like too much oats no2w that I added 1 and 3/4 c.

  24. I must have done something wrong! They didn’t rise :and were very dense, still yummy though! I substituted applesauce for oil , arrowroot for baking powder (thinking this is where I messed up, but from my research I thought it was a direct substitute) and whole wheat flour for the pastry flour everything else was left unchanged. Thoughts? I wanted to use the arrow root cuz my daughter has a corn allergy and baking powder has cornstarch in it,

    • Oh no you can’t sub the baking powder with arrowroot powder they don’t behave in the same manner. You need the baking powder for the muffins to rise and become spongy that is why they were dense. Arrowroot powder is like cornstarch but not like baking powder or baking soda. I am glad that you liked them at least :-)

  27. Finally got around to making these and they are AMAZING. I couldn’t find any cranberries at all so I used some blackberries I picked from my patch this summer and had frozen. My one complaint is my blackberries don’t have that same bite the cranberries would have had.

    I love these though. Super easy to make, the house smelled good while they baked and they’ll keep for a few day. A good amount of fiber and some vitamins to start the day, and with a little drizzle of honey and orange zest they wouldn’t make for a bad dessert, either!

  29. made them this morning, Used fat free milk and chopped the cranberries. Also used half white whole wheAt and half sprouted whole wheat. Delicious!!! Will make again and again.

  30. Yum! I was looking for a guilt free recipe for orange cranberry muffins and I looove baking with banana, oats, and olive oil too, so I’m so happy I found your recipe! I added the juice and zest of an orange so I only added a splash of milk. I also sprinkled in a bit of cloves and nutmeg. I went a little overboard trying to make it too healthy and didn’t add any sugar at all, but with the tartness of the fresh cranberries it needs the sweetness. Still delicious though and so much better for me than store bought. Thanks!

  31. made this recipe and it’s so delicious! Moist, not too sweet with a tart bite from the cranberries. I used coconut oil and pecans instead of the olive oil or almonds. Will make again, thank you for a great recipe!!

  34. For the lady who wanted to make the recipe gluten free, 1/2 brown rice flour or sorghum flour and 1/2 oat flour usually makes a good substitute for whole wheat flour.

  38. I JUST made these with my 3-year-old daughter and they are AWESOME! I love that they taste sweet enough to be super yummy but healthy enough to feel good about! And the texture was great. Sometimes muffins can be too dense or too blah, but these were a little crispy on top and just right! I used old-fashioned oats and they came out just fine. And I didn’t have muffin liners so I just greased my tin with butter and they came out fine. Thank you for such a great recipe that my family loves!!

  41. I just made these today and will definitely make them again. I did substitute the bananas for 1 cup homemade applesauce because I am alergic to bananas. I also used 1/4 cup brown sugar instead of the unrefined sugar, 1 tsp vanilla, 1 tsp cinnamon, 1/4 tsp cloves and a pinch of allspice. Tates just like Cranberry apple pie! Super moist and fluffy! Next time I want to try a salted caramel topping!

  42. These didn’t work very well for me, unfortunately! I used coconut oil, GF flour, frozen cranberries, 1 cup rolled oats + 3/4 cups quick oats and no nuts. Perhaps that’s where I went wrong?

I believe you forgot to include the sodium in the baking powder in your nutrition calculations.   Most people don’t realize what a huge hidden source of sodium baking powder and soda are.  I’m making these today using sodium free baking powder and I’ll probably toss in some chia seeds because I love their little crunch.

  45. I wasn’t expecting much (these looked way too healthy :) but they were so good! The only kind of cranberry muffin i’ll ever make again. They were moist with great texture and just enough sweetness. I made a few modifications: 1. Used regular white whole wheat flour instead of pastry flour; 2. added some orange zest and a little orange juice, maybe a tablespoon, and 3 Sprinkled the tops with coarse sugar and coconut. The coconut added a lot of flavor I think and made the tops look prettier. Thank you for sharing this fabulous recipe!

  46. These are delicious and healthy! I made them in a food processor. I took the instructions literally and put the cranberries in the food processor too. Next time I will stir those in at the end. I added extra orange juice and some almond flour. Thank you for the recipe.

  47. I made these cranberry muffins this morning and they are delicious! I followed the recipe as written except I left out the walnuts because my young granddaughter will be eating them as well. I did add a tsp of almond extract. I baked them for 25 minutes and they were perfect. I’ll definitely be making them again and might add a little flaked coconut and chocolate chips but totally not necessary. Yummy muffins! Oh and I got 16 out of the batter.
