Caribbean black beans

This week I have put my pressure cooker to work and holy crap…I think I have used it almost every day this week. My first time owning one and I am in love. I made my chickpea curry recipe two times in a row and then I made these caribbean black beans that are to die for. To tell you I am in love with the InstaPot is an understatement.

You see, I have never owned a pressure cooker because for some reason I was afraid of them. Not anymore. I have had my InstaPot in the box for over 3 months and I really don’t know why it took me so long to put it to work.

Canned beans are going to be out of the picture from now on. I have already bought enough beans where I don’t have to buy any canned variety. I just have to make sure to soak the beans overnight and then just cook them for a mere 20 minutes.

If you pre-soak the beans, this recipe will only take you about 20 minutes to make. While pre-soaking the beans is optional I prefer to do so since the cooking time gets cut by half so instead of taking about 40 minutes with dried beans it will take you just 20 for them to cook.

I am going to post the other chickpea curry recipe I made twice already in the blog. Super easy as well. I also wanted to make a video of this recipe so that you can see how easy it is to make. If you don’t have a pressure cooker I urge to get one. This brand that I have is rather easy to use and does different things.

Caribbean black beans

Miryam's original recipe

Yield: 8 servings

Total Time: 25-30 minutes

Ingredients:

  • 1 lb black beans, pre-soaked over night
  • 14 oz coconut cream, or coconut milk
  • 1/2 large onion, chopped
  • 2 large peppers, chopped
  • 3 garlic cloves, minced
  • 3 tbs tomato paste
  • 2 tsp dried thyme
  • 2 tsp ground cumin
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1 tsp celtic salt
  • Fresh cilantro, chopped
  • 4 cups hot water

 

 

 

Directions:

In your InstaPot, or any pressure cooker, add all the ingredients. No need to mix it through. I did a bit but no need.

Close the lid and set the pressure cooker to 20-25 minutes. Enjoy with some brown rice or by itself.

NOTE: You can serve this with brown rice, I did!

  1. That’s a very modern pressure cooker…mine is a stone age version..need to get a new one this year too. The black bean dish looks very delicious! One of reasons I don’t go paleo is because the legumes ain’t allowed in this diet…quite strange since they are so healthy and nutritious.

  12. That is a good looking pessure cooker, I need to check the Insta pot out.  Mine is from India and love it, although I understand, it is scary.   There’s not a day I go without cooking in it, we use it a lot in Indian cooking.
    Those beans look super delicious Miriam, full of flavor and good.

  15. This looks awesome. I just got am instant pot too. What setting did you use to cook these?  Another question is did it take a long time to build up the pressure before cooking?

  16. All I see is comments about your pressure cooker no directions directions would be nice. Is it one pound of dried beans or one pound of prepared beans how long do you cook it when do you mix the ingredients together those would be nice to put in your recipe rather than bragging about your pressure cooker just saying.

    • There is not much to it at all but pressing two electronic keys on the pressure cooker panel. In addition there is a video of the recipe and you can actually see what I press….and besides you should read the instructions that come with the device if you purchase it for your own safety. What else do you want? “Just saying”

  19. Hi. You didn’t mention whether or not you drained the beans after soaking. The picture goes by very fast, but they look drained and I’m thinking with 4 cups of water it’s pretty certain you did, but I wanted to double check. Thanks!
