No bake pumpkin cheesecake

Holly molly. This no bake pumpkin cheesecake is absolutely the bomb. I am not much of a pumpkin person but the subtle flavor of the pumpkin in this recipe was just enough to give it a little hint of it without over powering it.

I must begin by saying, you need to make this no bake pumpkin cheesecake ASAP.

I am not much of a pumpkin kind of girl but these are just plain sensational. Because I didn’t add too much pumpkin to the cheesecake layer, just 1/3 cup to be exact, the pumpkin flavor wasn’t overwhelming.

My kids loved these bars and so did my husband. Next time I make them, which will be soon, I will have to quadruple the batch. I have loads of leftover pumpkin that I have to use so I know I will be making them promptly.

  1. Is there a substitute for the medjool dates? So many recipes use them and I can’t due to the sugar content

  2. You can use dried prunes, or any dried fruit of choice however there would be quite some sugar in that too. Besides that I can’t think of anything right now. Sorry!
