Baileys pistachio ice cream

St. Patrick’s day is just around the corner and with that comes food that is indicative of the holiday. I love Baileys and this Baileys pistachio ice cream is right on point.

In fact Baileys is one of my very favorite drinks. Of course any time that I drink alcoholic beverages they have to be sweet so when ever I venture to drink Baileys I always mix it with a tad of almond milk and add tons of ice.

This Baileys pistachio ice cream doesn’t need an ice cream maker. I mean, if you do have one you can go ahead and use it for a faster version, otherwise just placing the mixture in the freezer is good enough, that is what I did.

If you are looking for the ultimate indulgence this Baileys pistachio fudge recipe is for you, in the other hand, if you are looking for healthier version and you want to save some of the sugar and calories this other Baileys pistachio recipe is for you. Either one is great, take my work for it.

Well, I hope you get to try this easy Baileys pistachio ice cream recipe. I made it with coconut cream because is what I had on hand but if you like you can use heavy cream or coconut milk.

Baileys pistachio ice cream

Miryam's original recipe

Yield: 4 servings

Total Time: 5 minutes

Ingredients:

  • 14 oz coconut cream
  • 1/4 cup maple syrup
  • 1/4 cup Baileys Irish Cream
  • 1/4 cup raw pistachios

Directions:

In a mixing bowl, with a wire whisk, mix all the ingredients. Place in a glass container, cover and freeze for at least 2-3 hours. Serve with some extra pistachios.

Note: I find that thawing the ice cream for 5-10 minutes works best before consuming.
